Need help with my electric smoker

I am hanging my head in shame because I still have not used my electric smoker. I picked up a Masterbuilt 30 inch electric smoker at Home Depot a couple of months ago. Then.... I'm pretty sure you don't want to read about everything that kept me from using it. Anyhow, I finally pre-seasoned it, got some wood chips, and am ready to give it a try. So, of course, I've got some questions.

I've got a boneless pork shoulder roast, a beef brisket, and some chicken thighs I'd like to smoke. Here are my questions:

I've looked all through the manual but can find no specific instructions on how to use the water bowl. My guess is that I should fill it up before smoking anything. Should I keep it always filled until the smoking is done? Anything else I should know about it?

The instructions call for pre-heating the smoker at a higher temperature before adding meat. Should the wood chips be in place during the pre-heating or should I wait until right before I add the meat?

The instructions say to avoid opening the smoker door unless absolutely necessary. But I've got to open it to check doneness, right? Don't I also need to check on whether or not I need to add more chips? So what constitutes opening the door too much?

Most of the manual recipes call for smoking meats for a certain number of hours and then wrapping in heavy foil to finish smoking. Is that what you do?
