Here's the Snickerdoodle recipe I use.
I think it's from Betty Crocker... But it's not a "soft cookie"..I didn't think they were supposed to be. They are crisp outside and soft inside.

Attached is the recipe I use. They come out softer than some other recipes I have tired. I would guess using the 1/2 shortening may help to make the cookie a little softer rather than using all butter which will generally create more crispiness. Be careful not to over cook the cookie as that too may lead to a less 'soft' cookie.

I would agree..shortening will give a softer cookie.

I have about 5 or 6 different snickerdoodle recipes. My fave (so far) is from allrecipes.

They do puff up in the oven, then flatten out when they are removed from the oven and start to cool. Like terri's (hi, terri!) they are crisp edges and soft chewy centers!

Mrs. Sigg's Snickerdoodles

Prep Time: approx. 20 Minutes. Cook Time: approx. 10 Minutes. Ready in: approx. 1 Hour . Makes 4 dozen (48 servings).

1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt

2 tablespoons white sugar
2 teaspoons ground cinnamon

Preheat oven to 400 degrees F (200 degrees C).

Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.

Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
Bake 8 to 10 minutes, or until set but not too hard.

Remove immediately from baking sheets.

Oh my goodness! I just posted, then went back and read the links for all the posts! Looks like carla and I use the same recipe!

Thanks for all your tips and recipes. I think I'll try terri's next - will keeping trying different ones until I find exactly what I'm looking for. Meanwhile we are eating a lot of snickerdoodles.

I'm pretty sure it was posted here at the CF..But I didn't copy down who did...Please claim!!!
I loved them..my kids weren't as keen on them..I think they prefer the "usuals" more.

Chocolate Snickerdoodles
1c butter
1 1 /2c sugar
2 eggs
2 1/4c flour
1/2c cocoa
2 tsp cream of tartar
1 tsp baking soda
1/2tsp salt
1 tsp vanilla
2T sugar
2 tsp cinnamon
Combine butter, sugar, vanilla, and eggs. Cream well.
Sift all dry ingredients except 2T sugar and cinnamon.
Add to egg mixture and chill dough for at least one hour.
Roll dough into balls about the size of a walnut. Roll in
combined 2T sugar and cinnamon. Place on ungreased
cookie sheet and bake at 375° for 8-10 minutes.
Makes 4-5 dozen

The chocolate snickerdoodles are Roselin's recipe and they are the bomb! They've become a family favorite.

Because of this thread, I had to fill the cookie jar with Snickerdoodles yesterday..When I got out my book, it's Sunset not Betty Crocker that the recipe hails from..
and when asked by #2 son..what kind of cookies I was making..and I said snickerdoodles..he said "chocolate? because those are the best!" LOL I thought I was the only one that liked the chocolate ones. LOL
So I promised next time I make snickerdoodles Chocolate it is.
