Black Bean Soup Question

On the old Top Secret Recipes forum, someone posted a recipe they had from their Mom and said it was a black bean soup to die for. I lost that recipe in a computer crash. Does anyone hear happen to have the recipe? I don't recall who posted it - maybe Bean.

Thank you, grainlady. However, the recipe was not one that Todd Wilbur created. The website used to have a discussion forum, and the recipe was contributed by one of the forum members. That is the one I am hoping to receive.

That would be great, Linda. I was only using what I had on hand, but tonight I will probably mix with rice and add some Caribbean hot sauce. I have ALOT, so I can try something new every day for the next week :-)

Sure. It's probably one of my favourites. 1 tbsp olive oil 1 onion, 2 carrots, 1 celery stalk - chopped 4 cloves garlic 1 tbsp chili powder & cumin pinch black pepper 4 cups broth 2 can black beans (15 oz) 1 can whole kernel corn 1 can crushed or diced tomatoes Saute veggies in oil for 5 min - add garlic for another minute. Stir in corn and broth. Puree 1 can of beans with half of tomatoes. Add remaining can and tomatoes to soup. Simmer 15 mins.

I don't have a "recipe"....but I cook black beans with a chopped small onion...1 pound of beans and a quart of chicken broth and enough extra water to cover...until the beans are soft....very soft and falling apart. Keep adding a little water as it is absorbed. Puree the beans, adjust seasonings, add about 1/2 cup of cocktail sherry....and serve topped with a dollop of sour cream. I know some add fennel and garlic but I prefer it without. Linda C
