Black Bean Soup - my first original recipe

Yesterday afternoon it snowed, and I considered myself lucky to make it home from picking the twins up from pre-school without an accident. I was in 2 very near misses, and I was driving so carefully. Anyway, I decided life is too short to use recipes, so I made my own soup! It was delicious.

Quick Black Bean Soup

1 lb black beans, rinsed

8 cups hot water

1 large red bell pepper, chopped

1/2 large onion, chopped

1/2 large butternut squash, peeled and choppped

4 garlic cloves, minced

1-2 tsp oregano

2 Turkish bay leaves

2 chicken bouillion cubes

2 cups cold water

Salt and pepper to taste

Place the beans in a large pot and pour the 8 cups of hot water over them. Bring to a boil, and let boil for two minutes. Turn burner off, cover pot, and let sit for an hour.

Add red pepper, onion, garlic, squash and herbs, along with 2 more cups of cold water, and bring to simmer. Add bouillion cubes. Cook beans till tender, about 1 to 1 1/2 hours. Add salt and pepper to taste.

Makes a BIG pot of bean soup.

Anyway, I know it's nothing compared to what some of you whip up on a regular basis, but I was proud of myself.
