Calling Linda (ducanoe)...for recipe

Or anyone who has the tossed salad and dressing recipe she posted long, long ago with tart apples in it. Seems like she just called it The Salad.

Beverly, I am at work, I'll look when I get home. I don't recall "The Salad" recipe having apples in it, but I may be wrong. It's been a while since I made it! LOL

ccaggiano, the amount of sugar used in fruit jams is not a safety issue. Traditional pectin needs a certain ratio of pectin/sugar/fruit to jell. An all fruit spread with no sugar at all is still safe to can, the issue is in whether or not it will jell. It has been noted here that "Pomona will jell water", so the sugar ratio isn't an issue. Cut it as low as you like until you are happy with the taste, it'll still be safe. I will note, however, that low sugar/no sugar spreads do not store as well or as long after opening and I've found that no-sugar spreads lose color. This picture shows this year's strawberry jam. This is a fantastic topping that might be just what Lexilani was originally looking for. It's perfect to go on top of cheesecake. I did find that my second batch was thinner than my first. To up the natural pectin, you could include the lemon seeds in a mesh bag during the simmer and remove them before canning. Look up the jell tests (put some on a plate in the freezer, check whether it sheets when running off a spoon, cook to 218Â° F) if you need help checking the set. You can use all blueberries and leave out the mango if you can figure out the yield (in cups) of 2 mangos so you have the same total volume of fruit. Melissa Blueberry-Mango-Frangelico Topping 2 mangos, peeled & diced 2 cups blueberries (fresh or frozen) 1 cup sugar 1 cup water 2 tbsp. lemon juice 1 tsp. grated lemon rind 2 tbsp. Franjelico Combine all ingredients (except liqueur) in a saucepan. Bring to a boil, reduce heat and simmer uncovered for 25 minutes or until liquid has thickened. Stir in Frangelico and cook for 5 more minutes. Ladle into hot jars, leaving 1/2 inch headspace. BWB for 10 minutes for half-pints and 15 minutes for pints. This made a little over 2 pints for me. I've used lime instead of lemon...and peaches instead of mangos and both variations also taste good :-) I believe this came from Topp & Howard's 'Small Batch Preserving.' SuzyQ2

I just picked our first zucchinis...they were about 4" long, but I couldn't wait. I'll have to let a few grow to try some of these recipes. I've been a zucchini fairy. When I started gardening I thought you planted the whole seed packet, no matter what it was. My friends avoided me, I left them on doorsteps. We made zucchini in every way, shape and form. Gallons of relish, b&b pickles, dried chips, 'apple' pie and mock pineapple (which feels like crushed pineapple in your mouth if you grind it using a meat grinder with a coarse blade....not too bad in quick breads). A friend of ours made this thrown together dish and it was always delicious. You can't get much more German than with Walter Staib. He was once also a White House chef. Black Forest Home Fries Serves 4 from Black Forest Cuisine by Walter Staib with Jennifer Lindner McGlinn 2 pounds Yukon gold potatoes, peeled salt 1 pound bacon, cut into strips about 2-inches long and 1/8-inch wide 2 garlic cloves, peeled and chopped 1 medium yellow onion, peeled and finely chopped Â½ teaspoon dried marjoram freshly ground black pepper 1. Place the potatoes in a large saucepan, pour in water just to cover, and season lightly with salt. Bring to a boil and cook the potatoes until they are just tender, about 20 to 25 minutes. Drain the potatoes, cool slightly, and cut into slices about 1/4-inch thick. 2. Heat a large cast iron skillet or heavy-bottomed sautÃ© pan over medium-high heat, add the bacon, and sautÃ© until crisp. Remove the bacon with a slotted spoon to paper towels to drain, reserving about 3 tablespoons of rendered fat in the pan. 3. Heat the reserved fat over medium heat, add the garlic and onion, and sautÃ© until golden brown. (If you wish to add meat to the dish, toss it in at this point.) 4. This is the only salad recipe I have of Linda's with fruit in it and it is very good. I love apple with brie cheese so adding some apple slices would be good too.

Strawberry Spinach Salad with Poppyseed Dressing (linda)

Source: St. Paul Hotel

Baby Spinach Leaves
Sliced Strawberries

Dressing:

1 c sugar
1/4 c poppyseeds
1/2 c Sesame seeds
1 c salad oil
1/2 c raspberry vinegar
dash paprika
1 T worcestershire sauce
1 T minced onion

Combine sugar and vinegar and whisk until sugar is dissolved. Add remaining
ingredients and chill well. Serve over baby spinach leaves and sliced strawberries.

Garnish with brie cheese wedges.

(you may want to half this recipe, as it makes a LOT of dressing...)

Thank you Michelle. Since my PC crashed I'm always glad to get another good recipe and every one of Linda's that I've tried have been good. I don't have any spinach or strawberries right now, but I'm definitely saving that until later.

Hi Beverly = I have this recipe which I have credited to diana - which is called the salad - BUT no apples - and nothing even remotely similar - lol. It is wonderful, though!

"The Salad" -dlundin
1/3 c real mayonnaise
1/3c shredded fresh parmesan
1/3 c chopped onion
1/3 c sugar
Mix together and refrigerate for several hours
1 head lettuce, torn
1 head cauliflower, chopped
1 lb bacon, cooked and crumbled
Toss with chilled dressing, top with additional parmesan if desired.

Beverly, was this the recipe you were thinking of? I totally forgot about this one, I was thinking of one of my other recipes this morning.

I made this over the summer and thought it was a nice change. It doesn't keep well, tho, so only make what you can eat in one meal.

Red Radish Salad
Recipe courtesy Rachael Ray

2 teaspoons sugar
1 lemon, juiced
1/2 cup sour cream
8 red radishes, thinly sliced
2 Delicious apples, quartered cored and thinly sliced
1/2 European seedless cucumber, thinly sliced
2 tablespoons chopped fresh dill
Salt and black pepper

Combine sugar, lemon juice, and sour cream in a medium bowl with a fork. Add radishes, apple, and cucumber.
Turn vegetables and fruit in dressing to coat. Season with dill, salt, and pepper, toss again; serve.

I know this is not what you were looking for but it's very good.
Toasted Pecan Salad
1 large head of romaine or assorted greens
Â½ cup seedless red grapes
1 apple Â cubed
Â½ cup sharp cheddar Â cubed
Â½ cup pecans Â toasted
Dressing
1 tablespoon Dijon or wholegrain mustard
1 tablespoon lemon juice
1 tablespoon Balsamic vinegar
1 tablespoon honey
5 tablespoons olive oil
1 garlic clove - chopped
Salt and pepper to taste
Directions
Mix all dressing ingredients together. Wash and dry greens. In a large bowl combine greens, grapes, apple, cheese, pecans. To toast pecans Â in a dry fry pan add pecans Â shake the pecans in the pan often because to will burn very quickly. Toss with dressing Â serves 6

Sorry, Beverly, that's the only salad recipe I have with apples. Must have been one from another CF member. Was it more like a Waldorf salad, maybe?

The one I have that we call "the salad" is made with cauliflower.

Hope someone comes up with a winner for you.

Could it have been Linda C instead of Canoe Linda and could this be the recipe?

Salad, pear, apple and raspberry

Peel and cut up 2 firm but ripe pears
And 2 granny smith apples
Dice 2 small ribs celery or 1 large
And add Â¼ cup walnut pieces
Dress with the following dressing

2 T seedless raspberry preserves
melted with
2 T rice vinegar.
Sprinkle a little of this mix over the cut up fruit and toss until all is uniformly pink
Cool and whisk in 1/4 cup EVOO
And Â½ tsps celery seed.
And dress the salad until all is moist.
