Happy Thanksgiving!

I had 5 Canadian friends from Vancouver and Calgary visiting the past weekend.

We ate at a few nice restaurants.

Not so happy for my turkey. I wish I would have taken a picture because it looked and tasted bad! Not sure what happened - I am guessing it was about 12 lbs and I cooked it at 325 for two hours. I didn't stuff it and it totally collapsed with wings and legs sticking all over the place. When I went to slice it, instead of slicing cleanly it kind of shredded apart and then it was difficult to cut through the shredded part. Weird. Funny thing was, I felt something was wrong while it was cooking and quickly made some meatballs to serve with the turkey - I have never done that before.

That's too bad. What kind of oven do you have? If you have a convection oven, it is like boiling the turkey for two hours.

We had a wonderful Thanksgiving weekend . The weather was absolutely glorious.

18 for dinner on Sunday. Everything turned out well, lots of leftovers for which our kids were REALLY Thankful!

Sharon, Sounds like a delightful Thanksgiving get together!

Now that our Northern friends have led the way, I expect you all to assist in our plans and prep!

Matt was home for Thanksgiving. We had dinner with our neighbour Clif. Clif did the turkey, dressing and gravy and I did all the sides and dessert.

Cookie, sometimes you can do every thing right. The turkey is perfectly roasted, not over cooked, and it just isn't good. All turkeys are not created equal. Nothing to do with you, and more to do with the turkey.

DC, I don't understand your "boiling" comment. A true convection oven has a third burner in the back wall of the oven. Where does boiling come into it?

Ann,

Convection oven by moving air rapidly over the food at temperature higher than 212 F (boiling point of water), the exterior of the food will reach 212 F much faster than in a regular oven. As far as the food is concerned, 212F is 212F, it cannot tell the difference whether the heat is from moving air or boiling water.

That's why in a convection oven, cooking temperature can be lower and cooking time can be shorter.

Well as I've said on more than one occasion I'm more interested in the final product than the science behind. I very seldom use the convection setting, since I roast already on high heat (500ðF). But the odd time I have used convection, I've never experienced anything that resembles "boiling".

There is a big difference between dry roasting something and "boiling".

I think it was just a weird bird. I have cooked a turkey on convection before and it turned out great. I did it regular bake this past weekend. Oh well, everything else turned out. I had a neighbour visit just after it came out of the oven and I got a "Oh Janet, Dave will bring some of ours over after I carve it." So I got some of theirs too. Glad everyone else had a good one.

Agree. Absolutely. You can never fry bacon in boiling water.

Roasting, baking, boiling, steaming, frying --- all give you very different end results on the exterior of food. But once the heat goes inside food, the food is not smart enough to know where the heat comes from and what generated the heat. Inside the meat, at 212 F, meat is cooked exactly the same way, no matter how you cook it.

No, but you can cook bacon in the oven using convection. And it doesn't look boiled.
