Clams Casino - Do you have a favorite recipe/method?

I see all sorts of recipes for clams casino on the internet. some are bready, some aren't. We're planning these for one of our Thanksgiving courses.

Some recipes call for just clams, bacon, and a shaving of parmesan cheese...others call for green/red peppers, breadcrumbs, bacon, celery, etc.

I'll be serving both the clams casino and my Mom's delicious but simple baked clams with just a dusting of fresh breadcrumbs, parsley, garlic, olive oil, and clam juice.

Do you have a favorite preparation for Clams Casino?

I don't use a recipe, but this one is very close to what I use and how I make them. I will indicate where I differ in parens.....

Clams Casino

24 littleneck or cherrystone clams, cleaned and shucked, bottom shells reserved
Rock salt
4-6 slices of bacon
2 tablespoons olive oil
1 tablespoon butter
1 shallot, minced
1 garlic clove, minced
Kosher salt and freshly ground black pepper, to taste
ÃÂ½ cup minced white onion
ÃÂ¾ cup minced green and red peppers
ÃÂ½ teaspoon dried oregano (I dont care for oregano in this)
ÃÂ½ cup dry white wine
1 tablespoon minced fresh herbs oregano and basil are nice (I use parsley)
1 cup panko (Japanese bread crumbs)
ÃÂ¼ cup grated Parmesan cheese (I dont use parm either)

Procedure

In a large sautÃÂ© pan, cook bacon over medium heat until crisp. Remove from pan, drain on paper towels and crumble; set aside.

Wipe out the sautÃÂ© pan, but donÃ¢ÂÂt wash it. Heat the pan over medium-high heat for a minute or two, then add the olive oil and butter.

SautÃÂ© the shallot, garlic, onion and peppers with the oregano and a pinch of salt and pepper until softened.

Turn the heat to medium high and add the wine. Reduce the pan liquid until only about ÃÂ¼ cup remains. Cool the vegetables completely.

Stir in the panko, reserved bacon, fresh herbs and half the Parmesan cheese. Taste and correct seasonings.

Shuck the clams, reserving the bottom shells. Arrange them on a bed of rock salt on a rimmed baking sheet.

Divide the stuffing equally among the clams, mounding it up slightly. Sprinkle the rest of the Parmesan evenly over the stuffing

Bake at 500ÃÂ°F until the clams are cooked and the topping is deep golden brown, about 7-10 minutes.

Serve immediately.

This is strictly a matter of personal preference. I'll give you mine.

My concept of clams casino is one where the clam itself is dominant. That means keeping additional ingredients to a minimum, just ones which play an important role in enhancing the clam. A clam on the half shell is only one mouthful, including the topping. It's easy to overwhelm such a small clam with toppings. Then, if only a small amount of topping is used, why does it need a dozen or more ingredients? How much of each one will end up on the clam if only a small amount of topping is used?

A few ingredients I would not use are:

Salt -- clams are naturally salty
Celery -- dilutes the flavor and texture of the clam
Peppers -- same reason
Wine -- dilutes the tasty clam juice
Cheese -- not terribly compatible with seafood
Olive oil -- redundant if bacon is included

Ingredients I would use are what you Mom uses for the clams you say are delicious. She has the perfect recipe. Why gild the lily?

Lately, I've been using an even more minimalist approach. Top each clam with a one inch square of bacon. Bake or broil until the bacon is done. Technically they are not Clams Casino and I don't call them that, but they are delicious. IMO, they are not improved by adding other ingredients.

Stuffed clams, the big ones, are a different story. We could discuss that if you'd like.

abd1, I've had my BS about as long as you have. I haven't used the broiler as much as the burners and grill. Last night I decided to try an old Julia Child recipe that I used to cook often - a spatchcocked chicken with a mustard-garlic topping that's done under the broiler. I remember how it cooked in my previous oven - a Gaggenau wall oven with electric broiler, so I could do a comparison. I used the broiler pan (lined w foil) that came with the oven, which was a good size once the chicken was laid out. I put the pan in the center of the oven rack but didn't try to do anything special in terms of lining it up under the broiler. It broiled evenly but was getting done faster than in my old oven. (One mistake I made was brushing the final mustard-garlic mixture on at the beginning - should have been the last five minutes. Sooo, it was getting dark too quickly. I moved the rack down one level and kept on going.) With this recipe, you cook the chicken for 15 minutes on side one, brushing with oil/butter every 5 minutes, flip it over and cook another 15 minutes, again basting every 5 minutes. The mustard topping goes on for the last 5 minutes. Despite my trying to do the recipe from memory and thus messing up part of it, my DH and I loved it - thought it was very juicy and tender. The skin was nice and crisp. I didn't have the chicken as close to the burner as I did with my electric broiler - the heat seemed much more intense. By moving down one level, it didn't affect the broiling area - the entire chicken from end to end was definitely getting exposed. It will take a bit more playing around but I was very pleased with how the chicken did. A few months ago, I broiled a rack of lamb using a butcher's recipe I've used many times in the past - in the Bluestar, it was definitely the best I ever did, as good as any restaurant. FWIW, I broil with the door open and pull out the drip pan slightly to protect the knobs from getting overly hot.

I DID look for the recipe Ruthanna, so thanks for posting it. I found some clams casino recipes and figured it was something like a clams casino "deconstructed." What fascinates me is that yellow rice. I have to find a good recipe for that, since BF got a 10 LB bag of rice for Christmas from his stepson. I have all the ingredients too, to make it. Maybe I will do it sometime while I am home in Allentown. Just a week and a half more.

Shee, I am much older than you (59) and cannot get my recipes organized either. I have an old metal index box full of hand written or typed recipes people have shared over the years, and drawer full, a drawer full, etc. Many are folded pieces of paper. Since you don't cook a lot or don't like to cook, if I were you I could get once nice box and recipe cards and hand write them. I bought my DD and DIL a Longaberger recipe box and the Longaberger cards. I went ahead and bought the liner for it and an extra pack of recipe cards. If you get the large one, it will hold a lot of recipes. It makes a lovely little accessory for your countertop, or if you don't like "stuff" on your counters, it takes up very little room in the cabinet. I see that it is being retired soon. Better get myself one - I am so bad to buy for others, and not spend money on myself! I use the same old faithful recipes most of the time, so this box should hold all the favorites. I am sure you can also find something similar at a much better price in the home stores. I also have lots of cookbooks. My favorite cookbooks are those sold by local clubs, organizations, churches, schools, etc as fundraisers. Living in a small town, I know most of the people who have recipes published in these books. My favorite is one compiled by the local Woman's Club in the seventies and my favorite recipes are those submitted by wonderful old ladies, most of whom are gone. My butterscotch pie recipe is from a little old lady I knew as a teenager - it calls for butter the size of a walnut. Was probably passed down to her as well. Maureen, here's a particular favorite of mine. I've made a few times now for our Christmas Eve dinner. This recipe works very well to do all the prep work ahead of time and just put it in the oven to bake. The recipe calls for wrapping 4 individual pieces of salmon in puff pastry, but for a larger group, I just wrap one larger salmon filet in the puff pastry, then bake it a bit longer. I've also made it with filo dough (layer with melted butter 3-4 sheets) instead of puff pastry and it is delicious. I think fresh parsley would work well in this dish instead of the dill and would compliment the eggplant, but too many additional flavors would not really help it IMHO. A Kulebiaka (or Coulibiac) Salmon in Pastry (this is from Bon Appetit) Salmon, Rice, Pastry 1/2 cup long-grain white rice 2 tablespoons (1/4 stick) butter 1/2 cup minced leek (white and pale green parts only) 6 ounces fresh shiitake mushrooms, stemmed, chopped 2 sheets frozen puff pastry (one 17 1/4-ounce package), thawed 4 6-ounce (4x2 1/2-inch) skinless salmon fillet 1 egg beaten with 1 tablespoon water Dill Sauce 2/3 cup bottled clam juice 1/2 cup dry white wine 1 1/4 cups cre fraÃ®che or whipping cream 3 tablespoons minced fresh dill Preparation for salmon, rice, pastry: Bring medium saucepan of salted water to boil. Add rice; boil uncovered until just tender, about 18 minutes. Drain. Melt butter in heavy medium skillet over medium-low heat. Add leek; sautÃ© until beginning to soften, about 4 minutes. Add mushrooms. Cover skillet; cook until mushrooms release their juices, stirring occasionally, about 5 minutes. Uncover skillet. (Can be made 8 hours ahead. Keep chilled.) Preheat oven to 400Â°F. Brush top of pastry with egg mixture. Bake until golden and thermometer inserted into fish registers 145Â°F, about 30 minutes. For dill sauce: Combine clam juice and wine in heavy small nonaluminum saucepan. Boil until reduced to 1/3 cup, about 9 minutes. Reduce heat to medium. Whisk in creÃ¨me fraÃ®che. Boil until reduced to 1 cup, about 5 minutes. Remove from heat. Stir in dill. Season with salt and pepper. If crÃ¨me fraÃ®che is unavailable, heat 1 cup whipping cream to lukewarm (85Â°F). Remove from heat and mix in 2 tablespoons buttermilk. Cover and let stand in warm draft-free area until slightly thickened (24 to 48 hours, depending on temperature of room). Refrigerate until ready to use. Transfer salmon packages to plates. Spoon Dill Sauce around and serve.

LOL Jim! I guess you have a point... if it were up to me, I would eat the clams raw on the half and just use the shells for all the other stuffing ingredients and be very happy.

Ok - these aren't really Clams Casino - they always have bacon, right? But I have a recipe for Baked Clams that's good. (Obviously, fresh clams could be used in place of the canned...):

Baked Clams

1 medium onion, chopped
1 bell pepper, chopped
2 celery stalks, chopped
1/2 pound fresh mushrooms, chopped
salt & pepper
3 tablespoons butter, divided
1 egg, beaten
2 cans minced clams, drained
1/2 cup + 2 tablespoons bread crumbs, divided

Saute the onion, pepper, celery, and mushrooms in 2 tablespoons of the butter until tender. Season to taste with salt and pepper. Mix in the beaten egg, the minced clams, and 2 tablespoons of bread crumbs.

Separately, mix together 1/2 cup of bread crumbs with 1 tablespoon melted butter.

Spoon clam mixture into shells. Sprinkle the bread crumb mixture over the top. Bake at 350 F. for 15-20 minutes, or until the tops are dark golden brown.

I'm sort of in Jim's catagory, keeping it simple !!!

Years ago we could buy Cherrystone Clams by the bushel, at a reasonable price.

Everyone went to my Uncles, to have Clams Casino.

I was the fresh Garlic and Parsley chopper, musher.
Now we have kitchen equipment to do this.

When enough was chopped I put it into a bowl, added EVOO,
a pinch of Salt and Pepper.

My uncle opened the Clams cut the clam free, of the shell

and set it in a Cupcake Tin , with another shell under,
so it wouldn't tip.

I put a spoon of the Garlic mix on each Clam and put them in the oven, at 350, til done ( about 10 min. )

Magnifico !!!

Like Sue said, there is great variety in Clams Casino recipes. I think most include some crumbs, bacon and garlic.

Lou, I didn't mean I use sea clams for stuffed clams. I use the big hard shell clams, the ones we call "chowders" here. They are just overgrown cherrystones. Briefly, the meat gets chopped up, mixed with a bread stuffing, put back in a shell and baked.

First things first..everyone LOVED the clams -they were light and delicious. Oh, but I forgot to take pictures as we were too busy downing the clams right out of the oven.

For this weeks tryout, I picked Alexa's and Jim's Casino suggestions. For Alexa's, I cut back on the red pepper and omitted green pepper (it bother's some folks stomachs). For Jim's I used a mix of soft butter, parsley, and garlic, then topped some with a breadcrumb mixture (just a dusting).

I also tried a variation of Lou's suggestion, adding a light crumb topping to some, and others I just topped with part cooked bacon and a shaving of Grana Padana.

To prevent them from drying out in the oven, I added a little clam juice before topping them(I used the shucking liquid) and a drizzle of olive oil. A spash of lemon juice right before downing them made them even more perfect.

I bought two dozen clams which rendered 48 pieces and served them as a first course to 4 people who inhaled them.

DH loved the bacon and I must say that all the flavors were really balanced.

As a side note, we went out to dinner on Friday to a fabulous place in our town and I ordered the Clams Casino as a sort of bench mark. I must say that what I made on Saturday was far superior to the slightly greasy clams at the restaurant. Thank you all for your suggestions. I think these are winners.

Next week I am going to try Lori's recipe just to have something different.
