I would use canola or grapeseed oil. You want something without any taste. Please let us know how it turns out! I tried to make chocolate mousse with tofu once and it was not good :(

Bobby, I'm pretty open-minded about vegan foods but that sounds dreadful. There is not enough sweetener in the recipe to make it frosting-like for me for one thing.

Drain the tofu for a while before making the recipe if you must.

I'd keep looking for another recipe. Sorry!

If it's a carrot cake, try a struesel topping, mix margarine, brown sugar, flour and some oats and/or nuts and sprinkle on top before baking.

Or just a light dusting of powdered sugar before serving. Serve with tofutti on the side.

I love tofu pudding, but it has a lot of sugar in it. This would basically be a pudding-like topping for the cake.

IF I had to use the recipe, I would probably use walnut oil.

Bobby, dump the vegan.....find yourself a nice carnivore! He can grill you a steak and you can make a real carrot cake with butter and cream cheese!

I have to agree the recipe sounds awful.
How about Cheesecake flavored pudding mix (not sure if it's vegan) made a little on the thick side with soy milk. Easy.

Thanks... I decided just to use fat free cream cheese icing instead... you guys made me realize how horrific that was. I will just use the tofu in a stir fry. My friend is vegetarian, not vegan... I thought thought it would be fun to do vegan. I have bad luck with tofu anyway, so I really shouldn't press my luck! The only thing "healthy" about this cake is that I will use whole wheat pastry flour instead of white. I may try to use fat free cream cheese to for the frosting... if it will hold up that is! Tried to make a cream cheese pie out of the fat free stuff many years ago and it never did set up. Thanks again!

I make my carrot cake fat-free by subbing applesauce for the oil. Only thing is, I have never had much success with using fat-free cream cheese for icing, as I find it stays too runny and will slide right off the cake unless I add prodigious amounts of confectioners sugar.

I honestly feel that there is no such thing as lowfat or low sugar cream cheese icing! That's why if I want to really cut calories I make my carrot cake in a bundt pan and then just lightly dust with confection sugar before serving, makes a lovely impression. Can also make as a flat cake and put a paper doily over the cake and then dust with confection sugar and then take the doily off for a nice effect. Carrot cake is very moist and doesn't need icing. Serve with ice milk or tofutti if you still need something creamy. Can also top cake with a pudding or cornstarch thickened fruit sauce after serving. That's low fat but not low sugar.
