Caraway Post Roast

The gravy is sweetened from the apple juice and is great on mashed potatoes.

1 boneless beef chuck roast (3 lb)

2 tbsp vegetable oil

2 medium onions, sliced

2 medium carrots, cut into large chunks

1 cup apple juice

1 tbsp caraway seeds

2 garlic cloves, minced

salt and pepper

2 tbsp cornstarch

1/4 cup cold water

1/2 cup sour cream

In a Dutch oven brown roast on all sides over medium-heat. Drain off fat. Combine the onion, carrots,

apple juice, caraway seeds, garlic, salt and pepper; pour over roast. Bring to a boil. Reduce heat, cover and simmer 2 -

2 1/2hours until meat is tender.


Remove roast and vegetables, keep warm. Strain pan juices into a 2 cup measure. Skim fat, add enough water to measure 2 cups.

Return to Dutch oven. Combine cornstarch and cold water until smooth, stir into pan juices until thickened.

Remove from heat, stir in sour cream and season with salt and pepper.
