do you have a great recipe for 'oven-fried' green tomatoes?

I am just about ready to give up on anything more ripening out there.

I pan fry them.....flour them and fry in butter!

I've never tried to oven fry them. Would they get crispy? We don't have them that often, so I go for the pan frying, too. We had them for dinner last night. I tried a new recipe. I dipped them seasoned flour, egg and then panko crumbs then fried them in butter/olive oil.

Thai Green Beans and butternut squash 1 medium butternut squash, split in half and baked at 350C until done (pierce with a fork to test) 1 can regular coconut milk (15 oz or so) 2 cups fresh cut green beans (frozen works too but fresh is best) 3 cloves garlic, minced 1 tsp sugar 1 tbsp lemon or lime juice 3 leaves from a kaffir lime 1 small bunch of fresh thai basil AKA Siam queen (regular sweet basil will also work) 1 small bunch chopped scallions 1 sliced hot pepper (I used cayenne and thai red peppers, leave in slices so they can be removed if desired Â green hot peppers will also work here) Salt to taste Bake butternut squash. When cool enough to handle, peel, seed and cut into 1 inch chunks. Open can of coconut milk. Use some of the solids on top (the oil) to sautÃ© garlic, kaffir lime leaves, sugar, salt and hot peppers for just a few minutes (do not burn the garlic). Add green beans and squash cubes and stir. Add the rest of the coconut milk can and cook for 10-15 minutes until green beans are done. Taste, adjust seasonings and sprinkle top with chopped scallions.

Well, I made fried green tomatoes tonight for my dinner and I have to say they turned out pretty good! I know this is the first time I've made them and it may be the first time I've ever eaten them. Yeah.....weird for a southern gal, right? What I did: sliced the tomatoes about 1/4" thick, put them in a beaten egg bath, dredged them through equal parts of cornbread mix and self-rising flour seasoned with some salt and pepper pan fried in olive oil until browned on both sides served with the Bang Bang Shrimp sauce: 1/2 cup mayo 3 TB sweet chile sauce 1 TB sriracha hot sauce 2 t. rice vinegar Watch out, these 'maters stay very hot a long time after cooking! Green Tomato Bread Yields 2 loaves (about 20 servings) 1/2 cup canola oil 8 ounces nonfat yogurt, plain 3 large eggs 1 cup sugar 1 cup Splenda (or use all sugar) 2 cups green tomatoes, pureed, juice drained and discarded 2 cups all-purpose flour 1 cup whole wheat flour 1/2 teaspoon baking powder 1 teaspoon baking soda 2 teaspoons cinnamon 1/2 teaspoon ground nutmeg 1/8 teaspoon salt 1/2 teaspoon ground cloves Preheat oven to 350 degrees. Grease and flour two loaf pans. Combine oil, yogurt, eggs, sugar, Splenda and green tomatoes in a large bowl and mix well. Sift together all purpose flour, baking powder, baking soda, and spices and add to wet ingredients along with the whole wheat flour. Stir together just until combined. Divide evenly between two prepared pans and bake just until a toothpick comes clean from the center of the bread, about 45 minutes. Let cool in pans, then remove. To retain moisture, wrap in plastic wrap and store in the refrigerator. I combined a couple of recipes and ideas I found on line. They did indeed come out nice and crispy in the oven.

Oven "Fried" Green Tomatoes - from http://southerngirlrecipes.blogspot.com/2009/09/oven-fried-green-tomatoes.html

1/2 cup yellow cornmeal
1/2 cup panko
1 tsp Creole Seasoning
1 egg white
3 green tomatoes sliced into 1/2 inch slices

Preheat oven to 375. Line a rimmed baking sheet with aluminum foil. Spray foil with nonstick cooking spray.
In a shallow dish, combine cornmeal, panko, and seasonings.
In a separate shallow dish, lightly beat egg white.
Dip each slice of tomato in the beaten egg white; dredge in cornmeal mixture to coat. Place on prepared baking sheet. Spray each tomato with nonstick cooking spray. Bake for 15 to 20 minutes or until lightly browned. Turn tomato slices and spray the other side with nonstick cooking spray. Bake for an additional 15 to 20 minutes or until lightly browned.

I put them on top of a baby greens salad with a vinaigrette and served with dollops of this remoulade sauce, from http://www.mustardsgrill.com (I made half this much, and it was more than enough):
Â 1 cup mayonnaise
Â 1 Tbs Dijon mustard
Â 1 scallion, white and light green parts only, minced
Â 1 Tbs capers, rinsed and minced
Â 2 Tbs minced fresh tarragon or chervil (I used dried)
Â 2 Tbs minced fresh parsley, rinsed and squeezed dry
Â 1/2 tsp freshly ground black pepper

Combine all the ingredients and mix well. Cover and refrigerate until needed.

Leftovers will make a great breakfast "sandwich" with fresh mozzarella slices.
