Doubling bread dough

I was about to talk about this on the pizza thread, but decided it would be veering off a bit too far from Stir fri's question.

The first time I tried doubling a bread recipe, I doubled everything - then read, while the dough was rising away ... and away ... and away... .... that you should not double the yeast when doubling the dough. "Now you tell me!" I yelled at the cookbook. Anyway, that experience taught me to stick to the single batch measurement on the yeast when doubling a bread recipe.

Well, what about salt? Should that be doubled, or how should one approach the salt when doubling recipes. I've doubled it each time, but I'm wondering if it wouldn't be better not to. Maybe add 50% more salt rather than double? What do all you bread bakers think? I haven't noticed the doubled recipes tasting too salty, so maybe I'm inventing something to worry about.
