Rough Soapstone-- Sanding question-- help!

Florida Joshua or maybe nomorebluekitchen can help me (I think you had some work done on your soapstone after it was installed, right?)

I got a sample of soapstone from the same lot that my slab will come from. It was a lot rougher than the original sample I had. You can see little grooves in it and the oil kind of pools. These are tiny groves, but the overall effect is that the stone looks greasy when oiled and it is not smooth like the other sample (which just looks dark and beautiful).

What is the correct grit sandpaper to make our slab smooth. Can this be corrected by sanding it? Our fabricator said he could smooth it out.

What is the best way to get our slabs really, really smooth? Are there any drawbacks to this procedure? What should we watch out for?
