Soapstone question- Help!

Okay, I've been here a while and I've learned alot about SS, but I don't recall any discussions on rolling out dough onto the oiled stone. Is this a no-no? I would assume the oil could transfer onto food? Am I crazy??? I need to be able to bake somewhere, I've had these disgusting tile counters for far too long!

I figure I can choose a different material for my island. I was thinking about the Misty Carrara solid surface and then got to thinking, why not get marble (that thought came after seeing mindimoo's fab. kitchen!)? I'll just make sure I stay on top of spills and won't prepare acidic foods on that counter. I have a little while to decide, just need some advice.

I'm still deciding on a sink. And backsplash, and hardware, and lighting---- ugh, does it ever end?!!
