Incidentally, about that obesity boarding school.......

.....Wellspring, the one mentioned in Newsweek's slideshow on obesity......I read about them in an earlier Newsweek article and I take serious issue with the diet they put their residents (all teenagers) on.

It's a low-fat diet in the extreme--more like no fat. To achieve this, they serve fake foods that try to be fat-free versions of junk foods. I think it's bizarre, frankly. The place is very expensive, and for what the parents are paying you'd think they could expect their kids to learn some things about eating healthy--not just eating to lose weight.

We all need some fat (good fats like nuts or olive oil) in our diet. I strongly suspect that for a lot of these kids carbs are the biggest problem. But the nutritional info for Wellspring's recipes doesn't even mention carbs; they list calories, fat, and protein.
