Very interesting article about gluten/bread

The New Yorker this week has a really fascinating article about the gluten-free thing, but also much of the article is about regular bread making, so worth a read if you bake from scratch at home, especially whole grain breads:

Good article, Writersblock! Thank-you for posting it!

There wasn't anything in it that I hadn't already been informed of by other articles posted in this forum, but it's very well written and a great overview.

One caveat: I've found that vital wheat gluten improves my home milled, whole grain sourdough because there's a delicate interplay between the protein content, starches, and yeasts, that can exhaust the dough before it's fully baked. Either VWG or commercial yeast will continue to be a crutch in my baking, and I'm okay with that. I'm not put off by what pure protein looks like raw, which is made much of in the article.

I'm cool with saitan, too (no, I'm not making my own, but it's great grilled in a sandwich with lots of veggies). Of course you can make weird crap out of pure protein. That doesn't prove anything! Like in middle school when the kids all whisper that the hot sauce at Taco Bell is so vicious you can shine pennies with it. It's not. It's just inefficient. There's a lot of vinegar in the hot sauce. Pure vinegar shines pennies even better!

Since most of the article is about poking holes in myths, I find this particularly ludicrous. I kept waiting to be told why VWG is bad, other than silly games, and it never came out. What they proved is that you need digestive enzymes to transform protein. Duh.

Thanks Writersblock. It is a good article. I'm happy to say that the bread I make is just flour, water, yeast and salt. I've never added vital wheat gluten. Never found it necessary even when making whole wheat.

Thankfully, no one that I share my breads with are gluten free.

Lots of crops are now "Round-up Ready". That means they have a gene spliced in that protects them from the gylcophosphate herbicide. Problem is the gene "jumps". That is it will travel with pollen to the field next door. If next door saves any seed from his crop Monsanto owns it because they own anything with that gene. Sort of like me buying bucket of paint and painting your house... making it mine because I own the paint. A pathetically stupid Judge has approved this crime. Oops... did I infect your crop... suppose I own your stuff now. Funny thing is Round-up is supposed to break down in three days allowing the planting of regular seeds. Soooo... if it breaks down into "harmless" chemicals so quickly why do we need Round-up Ready? One of those mouth saying one thing while the feet do another. Other problem is the gene jumps into weeds. DNA is DNA and it can attach itself to genes in another species. So now the weeds are becoming Round-up Ready. Traditional farming makes food more expensive but it is more dependable. The food also has more nutrients. I worked in the fields as a child chopping out weeds with a hoe. Without herbicide help the job is near hopeless. More then once I broke down and cried because the weeds were so thick it took an hour to go a hundred feet down the row. One of my childhood memories is the tears falling on the back of my hands as I chopped away at those nasty weeds. I've seen both sides of the herbicide issue with my own eyes. : ) lyra

Personally, I love veggies and have served them to my kids all of their lives. When my son was 6, he informed me seriously, "Mom, I'm a carnivore!". Still, he would eat his broccoli, so I didn't complain. He's never been a 'dipper'. My daughter loves ranch and Caesar dressing and will dip cauliflower or carrots as a snack. They've grown up with veggies unsneaked and served straight up--or with minimal dressing up. They through and out of picky stages, and now as teens they're fairly adventurous eaters. They love my roasted vegetable samosas, and will almost always try just about anything served to them. Meat on the side, of course--the hubs likes his meat so I've reached a balance. I have never nagged them much about sugar or sweets, and I took a lot of heat for that from certain family members who are a lot more strict than I was. While both went through stages where they'd overdo it, as teenagers they are more conservative and do self-limit. Both are label readers and have become conscious of serving sizes, calories, fat and carbs. They are both of healthy weights, though my son was chubby in his early years and I worried a little. I now breathe a huge sigh of relief. :-) I have a sister in law that was very strict about what her children must eat during each meal, and extremely limiting of sugary items and anything 'fattening'. While her children are all thin as rails and healthy in their teens, when mom isn't around they do not self limit sugar or fat consumption at all. I've seen two of them demolish an entire bag of Oreos in less than 15 minutes. (the big pack!) Still, every child responds to parental controls in their own way--what works for one may not work for another. I try not to criticize, but I do feel that not making a huge deal out of food is more conducive to developing a healthy attitude towards it. Just my $.02 and sorry for the ramble... Cj

I was thinking this morning about how to reduce the polarization. I have no idea how to deal with the social media issue, but I think that the structure of our two party system and the electoral college contribute to polarization. I think that ranked choice voting would be a good first step. Think of a primary with 15 or 20 candidates, which we had in this election and in 2016. You tend to have a lot of candidates in the middle of the field and a few that are farther to the left of right. The middle-of-road vote gets split among a bunch of candidates, which gives the more extreme candidates an opening, even though collectively the middle-of-the-field candidates have more support. In ranked choice voting, you choose your 1st choice candidate, 2nd choice, etc. When they tally the votes, they do it in rounds. After the 1st round, they eliminate the candidate with the lowest number of 1st choice votes. The vote of anyone who listed that candidate as their first choice gets reallocated to their second choice candidate. The votes are retallied and the last place candidate is again dropped. Repeat, until you run out of rankings (I think I've only had to rank up to 5 candidates, even when the field was larger). I hesitate to use concrete examples for fear of setting off censorship. But if you are voting on 3 candidates, who we will call Left, Middle, and Right (though within a party primary, one of those would be "center), and the people who like the Left candidate put Middle as their second choice, and people who like the right candidate put Middle as their second choice, then the candidate in the middle will get the nomination. The primaries are a good place to start (especially since it is purely up to the parties). But what if we went further, and used it in the general election? And what if the Electoral College used ranked-choice voting (that would definitely take a constitutional amendment)? I think with that change you could have more than two major parties, and the ranking would push the final choice toward the middle. I think. I'm obviously ready for some serious reform.

Like Ann T, I've found that my bread doesn't require vital wheat gluten. I used to use it when making whole grain breads, then when I was out of it, I made some without it and it turned out fine. I never bought any more.

Unfortunately, my oldest daughter has just been diagnosed as being celiac, she says the thing she'll miss most is my homemade bread, so I'm busily trying to adapt. We'll see how successful I am, I guess.

Annie, are you using your own mix, or one of the gluten free blends?

BTW, what matters with the whole grain baking is the protein content of the grain. King Arthur's whole wheat is 14%, and doesn't need VWG. I don't have numbers for Arrowhead Mills red wheat berries, which is what I can buy in bulk locally, but it's consistently not as strong. I've tried and tried coaxing it, but the VWG is the only thing that keeps it from sinking under its own weight. I have Palouse Brand wheat which is 14% but I save it for pizza where a quick strong oven pop is crucial. If the numbers for the new crop are the same, I'll be buying buckets and seeing how it does with bread. :)

There's a LOT that goes into it if you're not using a standardized brand.
