Chocolate syrup recipe?

I am looking for a recipe that will keep a long time in the refrigerator so I can use a shot now and then in my coffees.

So something that has some form of chocolate and sugar and no dairy and...no corn syrup if possible.

If you have a t& t recipe, I'll try it.

This recipe from all recipes might be good but quite a few posters said it was awful and gritty.

What do you think before I try it? Any tips?

I have Hershey's (regular and Special) and ghirardelli cocoas on hand.

Ingredients

1 1/2 cups water

1 1/2 cups white sugar

1 cup cocoa powder

1 dash salt

1 teaspoon vanilla extract

Directions

Combine the water, sugar, cocoa powder, and salt together in a saucepan over low heat; whisk constantly until the mixture thickens and begins to simmer. Remove from heat and stir the vanilla into the sauce. Serve warm or cover and refrigerate until serving.

Looks very similar to this recipe that I use. Supposedly, this recipe was on the Hershey's cocoa label before they marketed their syrup.

Copycat Hershey's Syrup

1 cup cocoa
1 1/2 cups sugar
1 dash salt
1 cup hot water
2 teaspoons vanilla

Directions:

Combine cocoa, sugar, dash salt, and hot water in saucepan. Stir to combine. Boil 3 minutes. Remove from heat; add vanilla and stir.

Store in a clean container in refrigerator. Makes enough to completely fill a pint canning jar.

I can vouch for Lori's Sauce. I believe it is her grandmother's recipe.

Lori's Chocolate Sauce

2 tablespoons butter,
2 ounces of semisweet choc,
2/3 cup sugar,
1/2 cup cream and vanilla

Add the vanilla after the sauce is smooth (sugar melted) and shiny
Its so easy and good - nice and thick and rich

You could try these, too. I use this all the time with great results. Syrups made from blackberries, huckleberries, raspberries, boysenberries, loganberries, sour cherries, and Island Belle grapes as well as mixtures of berries are of good flavor, color, and consistency (thin like maple syrup, medium thick like corn syrup, or slightly jelled). Syrups can be made with or without pectin and lemon juice. Lemon juice may improve color. Use of pectin will vary consistency. To Prepare Fruit Puree: Sort, stem, and wash ripe fruit or thaw frozen unsweetened fruit; crush fruit thoroughly; measure crushed fruit. Add 1 cup boiling water to each 4 cups crushed fruit and bring to a boil. Reduce heat and simmer to soften--about 5 for soft fruits...about 10 minutes for firm fruits like cherries and grapes. Press through sieve. SYRUPS MADE WITH PUREE 4 cups puree 4 cups sugar 1/2 package or less powdered pectin (if desired) 3 or 4 Tbsp lemon juice (if desired) 1. Mix puree, sugar, pectin and lemon juice. 2. Bring to boil and stir for 2 minutes (boil till jelly thermometer reaches 218F). 3. Remove from heat, skim off foam, and pour into 1/2 pint or 1 pint jars to within 1/2 inch of top. 4. Adjust lids and process in boiling water bath canner for 10 minutes. 5. I grow veggies - that's how I got started as a gardener, and I can't imagine summer without a veggie garden. Most years I do some freezing of tomatoes and pesto for the winter. I also put onions and potatoes into the root cellar and grow more garlic than we can eat in a year, even though we use garlic in relatively large quantities. I also grow leeks and have begun experimenting with heavy mulching in the garden in the late fall and then digging them in milder winter weather and early spring. Last winter they wintered well, though the snow was so deep I couldn't dig them until much of the snow melted. This winter I don't know how it will go, since they weren't as heavily mulched and we had some relatively cold weather, 0 degrees, with no snow. Prior to last winter I tried storing them in the cold cellar or the fridge, but it never worked too well. I'll eat most veggies, but my husband is like Dee in that he doesn't like many veggies, and except for onion family vegetables, unfortunately most of what he does like are warm weather veggies like peppers, eggplant, and tomatoes, so they aren't good storage or winter crops. I'd still like to try wintering over root veggies and some greens in a hoop house/cold frame at some point. I have a few blueberry bushes and cranberries, but haven't been successful with strawberries (the chipmunks get them just before they ripen!), so I get them as well as tree fruits from local farmers. Around here it's quite difficult to successfully raise tree fruits like apples or peaches without a heavy duty deer fence and the orchards use IMP to reduce their pesticide use to a minimum while still getting quality fruit, so I'm OK with that. Good resources for those who want to grow winter crops in cold frames or unheated greenhouses are Eliot Coleman's books, such as 'Four Season Harvest' or 'Winter Harvest Manual' which are great as far as when to plant crops for winter harvest, what can be grown successfully, etc. At some point in the future I would like to try this.

This sauce is one that my middle one uses as chocolate milk syrup. It kept very well in an old syrup bottle, but was very thick and he'd have to really squeeze to get it out. Kept for quite some time too with no growths or problems. Mocha Satin Sauce from Hershey's 1/2 c butter 1 c sugar 1 c whipping cream 1/3 c cocoa 1 t instant coffee (I used Espresso powder) or omit 1 t vanilla extract In a small saucepan over low heat melt butter. Add sugar, whipping cream and cocoa. Cook, stirring frequently, until mixture comes to a boil. Reduce heat and simmer 5 minutes. Remove from heat; stir in coffee and vanilla. Serve warm or cool. Cover and refrigerate leftover sauce. About 2 cups. To reheat: place sauce in small saucepan, stirring constantly over low heat. Here's another from the same book. Bittersweet Chocolate Sauce 2 c semi sweet chocolate chips 2 blocks unsweetened baking chocolate 1 c whipping cream 1 1/2 t vanilla In double boiler combine all ingredients except vanilla. Cook over warm water, stirring frequently until smooth. Remove from heat; stir in vanilla. Serve warm. Cover and refrigerate leftovers. Makes about 2 cups.

Thanks for posting that recipe, Ann, it sounds delicious! I don't think it will keep for weeks and weeks though so I need to find something that has no dairy.

I know there are a lot of excellent recipes for chocolate sauce here such as the one that Ann posted. I usually don't keep solid chocolate on hand, but I do always have cocoa powder(I like Hershey's Special Dark). The recipe above is basic, quick, and lasts quite a while in the fridge. It has crystallized around the edges on the occasions that I've forgotten that I had it, but warming and stirring took care of that.
BB, you could halve the recipe just to see if you like it. That way you wouldn't be wasting much if you didn't. Cocoa and sugar prices are ridiculous these days. HTH

I'd recommend Fox's U-bet chocolate syrup but make sure it's the Kosher variety. It's a different animal than the Hershey's style syrup - thinner and easier to mix in drinks but with a nice chocolate flavor.

I just grate a little bit of 70% cacao chocolate into my cup before I add the coffee......keeps for months if I don't eat it first. You may want to add a bit of sugar...I do.

Chocolate liqueur is very good in coffee, and you can also get Mocha flavored Kahlua, which I like even better. They keep indefinitely at room temperature, although they do not last long at my house.

If you are making a recipe that has sugar, water, and cocoa, I find it better to make a simple syrup with just the sugar and water and add the cocoa after the syrup has been made. I omit the salt in those recipes, as I am very salt sensitive, and instead of enhancing the chocolate flavor, I find that the salt only adds a salt flavor. I think it is supposed to balance the bitter flavor of the chocolate/cocoa, but I do not have a problem with that. If you are using it in coffee, the salt will be unnecessary.

Oh I like your idea best Lars- chocolate liqueur! Linda, I would use just grated chocolate but I drink iced coffee a lot and that's what I primarily want it for.

Torani brand gets good reviews on Amazon from chocolate syrup diehards but I can't find it around here and don't want 6 bottles will look for the Foxs -U bet brand, Ruthanna.

Well, I 'll try a small recipe of the simple sugar w & w/o cocoa. I would have left the salt out anyway Lars but might add some almond flavoring. Cocoa is expensive, noinwi!
It dropped almost 30 degrees in the last 24 hours so iced coffee won't be a huge thing much.

I appreciate all your input.

I buy Torani at WalMart. They are usually in the coffee section and on the bottom shelf, kind of hidden. I buy the sugar free chocolate and sugar free raspberry and really like them. Have one other flavor but haven't tried it yet.

Thanks, bc! I did look at our local wal mart but we do go to several different ones occasionally so I'll check them out.

A few are a little more gourmet than others :-)

I should have mentioned that the Fox's syrups are made with sugar for the Passover versions and corn syrup the rest of the year. Either way, they're located in the Kosher sections of our supermarkets rather than with the other chocolate syrups.

I have been using Smuckers Plate Scrapers topping, decorating Chocolate, in a plastic bottle.
There is Corn Syrup as an ingredient but for the amount I use in coffee,
it does not register on the Richtor Scale.

I have had a bottle in the frige for about 8 months
Keep it top down so it is easier to dribble out.
At times I run the front under hot water for easier pouring.

I also use Swiss Miss powdered Chocolate Drink Mix, for coffee.

Sometimes Anisette !!! What can I say, I'm Italian .
