Gosh I made a thick chocolate syrup some months ago..I know I found a recipe online..but I'm sure I didn't keep it..or it's scribbled on something in the recipe files..

This sauce is one that my middle one uses as chocolate milk syrup. It kept very well in an old syrup bottle, but was very thick and he'd have to really squeeze to get it out. Kept for quite some time too with no growths or problems.

Mocha Satin Sauce from Hershey's

1/2 c butter
1 c sugar
1 c whipping cream
1/3 c cocoa
1 t instant coffee (I used Espresso powder) or omit
1 t vanilla extract

In a small saucepan over low heat melt butter. Add sugar, whipping cream and cocoa. Cook, stirring frequently, until mixture comes to a boil. Reduce heat and simmer 5 minutes. Remove from heat; stir in coffee and vanilla. Serve warm or cool. Cover and refrigerate leftover sauce. About 2 cups.

To reheat: place sauce in small saucepan, stirring constantly over low heat.

Bittersweet Chocolate Sauce

2 c semi sweet chocolate chips
2 blocks unsweetened baking chocolate
1 c whipping cream
1 1/2 t vanilla

In double boiler combine all ingredients except vanilla. Cook over warm water, stirring frequently until smooth. Remove from heat; stir in vanilla. Serve warm. Cover and refrigerate leftovers. Makes about 2 cups.

I can't find my favorite recipe...It came with an Oster blender lots of years ago...I think!
It called for unsweetened baking chocolate, pulverized with white sugar in the blender.,..and I think some corn syrup....and then you heated heavy cream...or maybe some milk and some cream....and, poured that into the blender and ran until it mixed.
It got pretty solid as it sat....but you heated it up and it made the BEST hot fudge sundae...
If anyone knows that recipe...I would be grateful....'cause I sure can't find my copy!

This is my absolute favorite chocolate sauce. It's my grandmother's recipe:

Grandma Jane's Hot Fudge Sauce

In the top of a double-boiler (or over a very low flame in a 1-quart saucepan), stir together:

1/2 cup undiluted evaporated milk (or cream, if you're feeling decadent)
2/3 cup sugar
2 tablespoons butter
2 ounces semi-sweet chocolate

Cook and stir until sugar dissolves - mixture will be shiny and smooth. Add:

1 teaspoon vanilla extract

Oh...You absolutely must try Sol's recipe. It's the best I've ever tasted...the name says it all! She posted it with her Torta Caprese recipe, but the sauce is perfect for anything requiring decadence!

Oh-Merciful-Heavens-Hot-Fudge Sauce

6 tablespoons unsalted butter
1 cup heavy cream (whipping cream)
1 cup light brown sugar, packed
3 tablespoons light corn syrup
1 cup sifted cocoa
1 tablespoon vanilla extract
¼ teaspoon salt

In a large saucepan, heat the butter and cream over medium heat until the butter is melted and small bubbles form around the edge of the pan.

Whisk in brown sugar and corn syrup. Continue to cook until the mixture is smooth and no grains of sugar remain. Add the cocoa, vanilla and salt. Whisk again until smooth. Strain mixture through a fine sieve. The sauce will keep for several weeks.

Don't worry, I've been plenty lazy in the past. I figured I'd try some chocolate syrup with actual chocolate in it for a change. And real sugar. Yum!
