Peanut Sauce

Hi,

I like to make grilled chicken w/ peanut sauce or use it for stir fried chicken. The only bottled peanut sauce I ever liked and felt like it tastes like restaurant quality peanut sauce was the House of Tsang Bankok Padang. Unfortunately the stores around me no longer carry it. In the past year I have tried every other brand of peanut sauce and peanut satay and they are all GROSS. Most of which have citrus flavoring and that adds insult to injury.

Does anyone know how to make a simple peanut sauce for chicken that is somewhat buttery and somewhat oily but definitely not runny or citrussy?

This ones good,

Peanut sauce
1 med onion, chopped
1/2 tsp garlic crushed
1/2 tsp red pepper flakes
6 tbsp soya sauce
4 tbsp sherry
1/4 tsp ground ginger
3/4 c smooth peanut butter
1 c chicken stock
1 c whipping cream

Saute onion, garlic and red pepper. Add all other ingredients except cream. Bring to boil, then simmer 30 min. Strain mixture, cool, drain excess oil (if you want) and add cream. Reheat to serve. Makes 3 cups.

So is this one:

Makes 2 cups
1 med onion, cut into 1/4 inch dice
2 cloves garlic minced
2 tbsp vegetable oil
2 tbsp sambal oelek
2 tbsp lemon juice
2 tbsp soya sauce
3 tbsp ketjap manis (sweet soy sauce)
1/2 c peanut butter, smooth, unsweetened
1/2 - 3/4 c hot water

In s saucepan over low- med heat, suate the onion and garlic in the oil.
Whisk in the sambal oelek, lemon juice, soy sauce, ketjap manis and peanut butter. Whisk in 1/2 c of the hot water and bring to a boil. If the consistency is too thick whisk in enough water to thin it out. Keeps for 2 weeks in fridge.

Doesn't look like this section of GW gets much traffic, but in case you drop by -- thanks for the recipe. I just made the peanut sauce, which is a nice balance of flavors, not to mention really quick to make. Now going to make the sprouted bean salad, since I bought a bag at Costco a while ago and haven't yet introduced it into my recipe rotation. I appreciate the recipes and the inspiration!

Heya Sunny: I make this all the time. I mix it up in a glass measuring cup and throw it in the microwave to heat. Simple. I use about a 1/4 cup of the Arrowhead or Tree of Life chunky PB, and about a tablespoon of tamari sauce, a few dashes of sesame oil, a "schmere" of this thai roasted red pepper paste (it's so yum), and about a 1/4 cup of water. Heat and mix. Sometimes I add a bit of asian vinegar, and a pinch of sugar. A squeeze of lime juice is really nice too. GGG

I would wager a bet that it will. keep way beyond a week. It has acid, sugar and salt, much the same as does something like ketchup or bottled salad dressings. How would one determine that it did not "keep"? By what measure other than maybe some mold, would it be determined? And, that is unlikely to happen in any reasonable time frame, if at all. Lar's suggestion to add the peanuts when you use it is probably a good idea if you are really intending to keep it a while before using. . As he pointed out, they can get soft and you want that crunch and texture.

Peanut sauce for Fresh Spring Rolls 1/2 c natural peanut butter, crunchy or smooth is fine. I use unsalted. The amount of broth you'll need to use will depend on how moist/runny your peanut butter is. 3 tbl tamari or soy sauce 1 tbl honey 1 tbl grated fresh ginger 2 or 3 cloves garlic 1/2 c fresh cilantro leaves, packed 3 green onions, whites and greens Hot sauce to taste. I use Asian red chile sauce, maybe a tablespoon, or you can use red pepper flakes or a little Tabasco, or hot chile oil 1 c vegetable broth or enough to make a good dipping sauce (sometimes I use some coconut milk in addition or to replace some of the broth. You can use chicken broth, too, but I usually make vegetarian rolls). I chop the cilantro and onion in the Cuisinart, then set it aside or chop by hand. Process the rest of ingredients until smooth. Taste and adjust, stir in the cilantro and onion by hand. Better if made a few hours ahead, will last for several days in the refer. Add water or broth to thin, if needed. These are all approximate measurements; it's very forgiving of adjustments

Welcome to the CF, QQ. I remember you from the pet forum. I don't have a peanut sauce either. I'd have to eat it all alone so I only eat it if I order out.

This is what we had for dinner last night. Quick and easy. My recipe (or lack thereof) is basically what Shelley posted (the first one), but I don't use the sherry. Most of my family likes theirs more spicey, so I leave the cayenne on the table. I like mine with more garlic.

We had it over bow ties with chunks of cut up chicken and I threw some peas in too. Good stuff.

I like Thai peanut sauce.

Start with peanut butter - 1/2 cup smooth or crunchy.
Add tbl. minced garlic.
Add tsp sugar.
Add tbl of Nam Pla, aka fish sauce.
Add tbl of soy sauce.
Squeeze in a slice of lime.
Add coconut milk until you have the consistency you like.

Nam Pla and coconut milk make all the difference in taste.

Boy this is a friendly forum. Thanks for all the kind welcomings and replies.

The slice of lime and coconut milk and lemon juice is what they put in a lot of the peanut satay you get in the store and it taste too tropical. But I guess I can omit those ingredients and focus on the oil, sugar, soy sauce... slurp... mmm.
