Ashley's breakfast

Last week was Boss's Day and I'm one of those people who not only have to find something for Secretary's Day for my secretaries but for Boss's Day for the boss. Ah, the pleasures of "middle management". Ahem. Anyway, my boss is also a dear friend and I happen to know that she loves cookies for breakfast with a cup of coffee so strong you could just break off a hunk and carry it around. So, I baked a batch of dark chocolate/dried cherry/almond biscotti to go with the pound of Costa Rican coffee I got her:

Ashley managed to talk me out of half a dozen, she loves biscotti and learned to drink coffee while she worked at the coffee shop, so this was her breakfast:

She was a very happy daughter this morning, between the coffee and biscotti. Oh, and check out the new hairdo!

Annie, your boss is one lucky lady, not just for the biscotti but for that wonderful coffee.

And you are one lucky lady too, having a daughter who's bright, hard-working and lovely.

Toast and peanut butter, with a fruit topping like sliced oranges or apples, and a sprinkle of cinnamon and a drizzle of honey. I'll run that under the broiler real quick. I eat supper while driving from work to my volunteer gig cleaning cat cages at the local rescue. I'll take cubed cheese, celery and carrot sticks, nuts, and fruit such as grapes, basically finger foods, and only eat while stopped at traffic lights. There's a real long one about half way there, where I can eat about half my dinner while stopped at the light. Then, I finish up once I reach my destination, and am parked in a parking spot. I sometimes wonder if people wonder why I'm eating in the Pet Smart parking lot. lol Sally

Pineapple muffins do sound good, I'd like that recipe too, Booberry. I don't like breakfast, or anything before about 9:30 or 10 am, so at work I usually wait until then and toast an English muffin (100 calories, high fiber), spread with peanut butter. (shrug) It works. Ashley liked those Power Shakes with peanut butter, banana, chocolate and milk, all blended. She sometimes had a cup of chicken noodle soup and a grilled cheese sandwich. I made calzones for both the girls filled with scrambled eggs, bacon or sausage and cheese, and they liked breakfast burritos with the same fillings. Ashley also liked baked potatoes with sour cream and butter for breakfast. Elery likes hard boiled eggs, remove the yolks and fill the whites with salsa. Grandpa used to like pie for breakfast, he said it was no different than toast and jelly. Now, if I had pie, I might even want to eat breakfast! Annie

I have Laura Ashley Pale Gold 3 in my breakfast area. I believe it is one shade lighter than Gold 4. Sand 3 and Sand 4 are also very nice if you want something with less yellow. I have those in my home also.

I've never had any particular traditional breakfast for Christmas - it varies. It seems to me that 2 year olds still eat pretty much anything, they haven't gotten too picky yet :) This is easy and festive and good, I'd serve it with bacon. APPLE PUFFED PANCAKE 6 eggs 1-1/2 cups milk 1 cup flour 3 tablespoons granulated sugar 1 teaspoon vanilla extract 1/2 teaspoon salt 1/4 teaspoon cinnamon 1/4 lb. butter 2 apples, peeled, cored and thinly sliced 3 tablespoons brown sugar Preheat oven to 425 degrees. In blender (or large bowl) mix eggs, milk, flour, granulated sugar, vanilla, salt and cinnamon until blended. (If using a mixer, batter will remain slightly lumpy.) Melt butter in a 12 inch quiche dish or a 13 x 9 glass dish in the oven. Add the apple slices to the dish and return to the oven until the butter sizzles. Do not let brown. Remove the dish from the oven and immediately pour the batter over the apples. Sprinkle with brown sugar. Bake in the middle of the oven 20 minutes or until puffed and brown. Those biscotti look delicious, and your boss is a lucky lady to have you! Can you share the recipe, pretty please???? Annie, your daughter looks just like you! I love the hairdo, I wish I could copy the adorable cut. It would not look quite so lovely and pixie-like on me:-)

Ashley looks lovely especially with that snappy hairdo! I was half expecting to see Ashley's famous chocolate peanut butter smoothie recipe you gave me.
