Sorry all I have is the Sinbun Recipe ( Cinnamon Bunns or Sticky Bunns ) Lous Cinnamon Buns ------ SS Pan ,9 ½ in by 12 in by 2 ½ in deep Or Pyrex baking dish 3/4 stick of butter and 1 tablesp. Of Vegetable oil Pancake syrup , Brown Sugar and a little granulated sugar Cinnamon and Raisins Melt the butter in the pan and let it cool ( put it in the refrig. a few minutes) Level it across the pan and back into the refrig to harden. Take it out and Sprinkle very little oil and move it around with the back of a spoon. Dribble some pancake syrup all around the pan , then a little gran. Sugar Then lay in some brown sugar . Dont be chincey , leave some lumps. Last sprinkle ( good bit ) of Cinnamon and Raisins. You can also add some walnuts, If you want to. If you dont want to , dont do it but dont blame me , if you didnt Do and wish you had done , etc. Take half + of the recipe of the Braided Bread dough and roll it out to about 3/16 in thick ( 3 pennies ) You can do the dough in 2 pieces if it is easier. Try to roll them out to at least 16 in long. x 12 in. Sprinkle some pancake syrup, Sugar and cinnamon on the dough , then some raisins. Roll the dough up loosely, Making a 12 in. long Roll and cut into 1 in. pieces. Mark the roll ,at half way and half again before cutting., into 8 pieces. Do the same to the other piece of dough Place these pieces in the pan that you prepared , leaving spaces in between , because the dough will grow. Push them around with your fingers, to fill the pan evenly. When the dough is doubled , bake in a 320 degree oven , on a shelf near the top, for about 25 to 35 minutes or golden brown. You can Baste , with an egg milk mix, while baking. When it is removed from the oven , place a piece of aluminum foil over it and a large cutting board or cookie tin and then flip it over and remove the pan. If some of the goodies stay in the pan take them out right away and patch the Buns while the goo is still hot. WARNING !!!! Get away from them until they cool. !!!!!!!! You will burn your lips Now you can see if you used enough brown sugar and gooey stuff. . Braided Bread Everyone has their own way to do this, which is better. But! I like to cook and bake using easier ways, long as the end results are the same. I've used this recipe since I got out of the Army, a very long time ago and converted it from Army Baking (Large amounts )to Home Baking. It wasn't easy going from 4 Quarts to 4 cups , etc. But I worked it out. I got the results that I wanted and I'm passing it on to everyone . Here is the recipe: Luigis - - - Braided, Plaited Bread or Dough for Cinnamon Buns , Bagels, Etc. 2 cups of milk, (warm ) - - Sometimes I sub Powdered Milk 1 1/3 cup of Sugar 3 large eggs- beaten (save ½ egg w. a little milk for basting ) 1 tablesp.+ of Vanilla - - ½ cup + of oil - - ½ teasp. Salt 2 packs of Fleischmans Active dry yeast AP Flour - 3 cups to start ( probably about 6 total ) enough to knead into a soft ball that doesnt stick to your hands. I now substitute a cup of WW Flour. Makes it more tender. Stir the yeast in a 1/3 cup of warm water w. ½ spoon of sugar, to test it for raising. In a large mixing bowl, or (KA mixer) place the warm milk ( not hot ) add the sugar ,vanilla , salt & eggs Beat until the sugar is dissolved and add the Yeast and mix well. Add 1 cup of WW flour and 3 cups of AP flour and mix with mixer a few minutes. Add flour until you make a " soft " Ball of dough that doesnt stick to your hands. Dont make it too stiff , try to keep it a "soft dough." On the Work Top, Sprinkle some flour under the ball and Knead it until smooth. Place it in a large bowl, Rub some oil on top. Cover with a damp towel and place in a warm spot ( until double.) I usually turn my oven on for a few minutes to warm and shut it. Place a pan of hot water on the bottom shelf. Then place the dough bowl in the oven to rise. When ( doubled ) deflate and put it out of the bowl onto a floured worktop. Punch it down and knead the dough again. Then cut into 2 pieces ( 2 loaves ). Divide each piece into 3. Roll each of these 3 pieces into the shape of a sweet potato ( about 12 in long ). With the basting ( egg ) mixture and wet the tips of the 3 pieces and stick them together at one end . Then spread the other end the shape of an arrow While keeping the stuck ends down and away from you , twist each piece clockwise about 8 times and lay them down so you can Platt or Braid them and stick the other ends together There are other ways to Braid ( 6 Strands ) but I take the fast easy way to do things. Place the 2 shaped loaves on lightly oiled cookie tins, or in loaf pans. Preheat the oven to 400 deg. Spray some Pam on the loaves or brush with oil. This will keep them from drying while raising. When doubled in size (about 20 min.) place in the oven , top shelf and bake until slightly tan. Baste them with the egg mix and rotate them back into the oven and ( Turn temperature down to 325 deg.) Baste again when they are a dark tan. Cook till a rich brown, mahogany color. Take them out of the pans onto a rack to cool. Control yourself !!!! Let them cool !!! This sounds like a lot to do but it is easy and should take only 10 minutes to mix and shape. The most time is in the waiting for the dough to rise and for the bread to cool . But it do look great !!! & Professional This dough can also be used for Cinnamon Buns . I use it for Bagels too. I like the Hardly Noticeable, sweet taste.

1. Have you checked your oven temperature with an oven thermometer? That's how you KNOW when your oven reaches the correct temperature for baking - not according to any certain amount of time or a magic pre-heat beep from the oven. Many ovens are out of calibration. Just because the knob or digital read-out says 350F, doesn't necessarily MEAN that's the actual temperature. You need to check the temperature with the oven thermometer where the baking is going to be done (such as the middle rack in the middle of the oven). In some ovens the temperature can differ from one rack to another, as well as from the front of the oven to the back. Baking muffins in an oven that is too hot will create asymmetrically shaped muffins. If the oven temperature is too cool, the muffins will be heavy and not rise correctly. Most muffins bake at 350°-400°F. Those temperatures vary according to the recipe and the type of batter used. 2. If the silicone muffin pans aren't working for you, then I'd suggest using standard metal pans. If you don't like the clean-up, use paper or foil muffin papers to line the muffin pans (metal OR silicone). Did you spray your muffin pan with PAM or other vegetable spray? That can discolor silicone (as well as metal pans), especially any over-spray on the surface top of the pan. I avoid PAM for spraying ANY type of pan - it's just nasty, gunky, stuff that builds up on the surface and is difficult to remove. Did you place the silicone muffin pan on a flat surface (a cookie sheet) during baking? There are different finishes on different brands of silicone bakeware, and some work better than others. 3. How did you mix your muffins? Only mix muffins until the dry ingredients are almost completely incorporated (even a small amount of dry ingreients still visible is okay - over-mixing ISN'T okay). DO NOT use an electric mixer because that results in too much gluten development and poor quality muffins. A wooden spoon or spatula will work fine, even a dinner fork is a good choice for mixing quick batters. A Danish Dough Whisk is actually one of the best investments for hand mixing (yeast breads, quick breads of all kinds, etc.). Your problem may partially be your mixing technique, oven temperature, as well as the pan. Wait to mix and pan muffin batter AFTER the oven has completed pre-heating. You never want the batter to be waiting for the oven to heat (that goes for all batters that have chemical leavening - soda/baking powder - in them.) Due to the type of leavening (baking powder), you need to quickly mix, pan, and get it into a hot oven to get maximum lift out of the leavening. Baking powder reacts twice, once when it is mixed with the liquid ingredients, and again when it hits the hot oven. It will lose it's UMPH the longer it sits waiting for the oven to pre-heat. 4. Normally, a bread machine only needs "babysitting" for the first 10 minutes or so of mixing/kneading until you are sure the dough has the correct hydration. You have to do that with ANY bread making technique, not just bread machines. I use a bread machine for nearly all my yeast breads anymore (dough only). It does a better job than either by-hand or stand mixers. King Arthur Test Kitchen uses Zojurishi BM for all their bread dough making for just those reasons. Patience is still a virtue, even in this ADD/ADHD world where people choose baby carrots so they don't have to peel and chop whole carrots, salad in a bag, instead of choosing the greens, washing and preparing them, and a whole generation who only "cook" using a microwave. Cindy's Cafe Bran Muffins Makes 3 dozen 2-inch muffins. from Cindy's Cafe and Catering, Mt Vernon, Ill. (from Ford Motor Travel Magazine) 1 cup boiling water 1 cup All-Bran Cereal 1 cup raisins 1/3 cup sugar + (¼ cup molasses - ¼ cup honey) ½ cup Crisco 2 eggs 2½ cups sifted all-purpose flour 1 teaspoon salt 2½ cups baking soda 2 cups buttermilk 2 cups 40% Bran Flakes Cereal 1 cup pecan pieces Mix water, All-Bran and Raisins in a bowl and let stand. Cream suger and Crisco in large mixer bowl. Add Eggs one at a time. Sift Flour and Baking Soda together. Add alternately with Buttermilk. Mix well. Add Bran Flakes and Pecan Pieces. Stir in the Bran and Raisin mixture. Fill greased muffin tins 2/3 full. Bake in a preheated 400o oven for approximately 20 minutes. Note: For muffins to rise properly, they must be baked in a thoroughly heated 400o oven. For Cake (12 x 9 pan) start at 400, then reduce to 350. Bake for 55 to 60 min., or until center of cake test indicates. Personal Note: When I make this recipe I use 3 cups of All-Bran (instead of the 1 cup) and eliminate the 2 cups Bran Flakes entirely.

Coincidently, I just sent this recipe out to the students of my Epicurean Kitchen Garden class. This is an upscale version of what might have been made during ancient Roman times: ITALIAN CHEESECAKE WITH POMEGRANATE SAUCE Serves 16 Ingredients Cheesecake 1 Tbs unsalted butter, softened 16 ounces skim-milk ricotta cheese, well drained 1 pound mascarpone cheese 1 cup sugar 4 large eggs, separated 1/3 cup unbleached all-purpose flour 1 tsp salt Pomegranate Sauce 4 large pomegranates (about 3 pounds) 3 Tbs cornstarch, sifted 3/4 cup sugar Directions Cheesecake Preheat the oven to 325°F. Grease a 9-inch springform with the butter. Line the bottom of the pan with parchment paper and grease the paper with the remaining butter. Generously dust the pan with flour and shake out the excess. In a bowl, with an electric mixer, beat the ricotta and mascarpone until smooth. Beat in the sugar. Beat in the egg yolks one at a time, until well blended. Fold in the flour. In another bowl, with clean beaters, beat the egg whites with the salt until stiff peaks form. Fold the egg whites into the cheese mixture. Pour the batter into the pan, and smooth the top with a spatula. Bake for 1 hour and 10 minutes, or until a knife inserted in the center comes out clean. Turn off the oven and leave the cake in the oven with the door ajar for 30 minutes. Remove the cake to a rack and let cool completely, then cover and refrigerate the cake for at least 2 hours. To serve, run a knife around the edges of the cake to loosen it. Release the spring on the side of the pan and remove the springform ring. Put a serving dish over the top of the cake and invert it onto the plate. Remove the parchment paper. Spread the pomegranate sauce evenly over the top of the cake. Cut the cake into wedges. (The sauce may also be placed in a bowl and passed on the side.) Pomegranate sauce: Cut the pomegranates in half. Place a fine mesh sieve over a large bowl. Using a spoon or your fingers, scrape the seeds into the sieve. With a wooden spoon or a flat meat pounder, press on the seeds to extract 2 cups of juice. Discard the seeds and set the juice aside. In a medium saucepan, mix the cornstarch with the sugar. Slowly stir in the pomegranate juice and mix well. Cook the sauce over medium heat, stirring constantly, until the sauce begins to thicken and darkens to a deep wine color, and the sauce coats the back of the spoon. Remove from the heat and let cool. The sauce may be made ahead and stored in a jar in the refrigerator. It will thicken somewhat if stored. When ready to use, thin with a little warm water if necessary. Joe
