Pancake Mix

When I make pancakes, I usually make them from scratch. But, on my last Costco trip, I picked up a bag of mix to look at and a lady passed by saying "It's really good." so I caved and bought it. Well, homemade is waaay better. Any suggestions for using up my enormous bag of pancake mix? Or are pancakes pretty much all you get. Looking for some creative input. Thanks.

Did you buy the 30 lb Krusteaz brand? That is what I purchased. I ended up sharing with a few family members. But I hope someone has other ideas. I would save them for the next time I purchase a bag.

I'd check the manufacturer's web site and see if they have recipes using this product. I'd also try using it in recipes that call for baking mix (Bisquick).

Gran2 LOL! That depends on what you consider 'unusual'. My DD just recieved Mary Jane Butters Farm Girl book for her birthday ... jello salades are pretty 'unusuals' in Northern California. The DH is from Ohio so he rattled off all sorts of jello salades for her. She said 'weird' and I reminded her that is normal faire in the Midwest and to please call it 'exotic' until she tries some to keep an open mind (we did a can peach and mini marshmallow salade for her to try and she was delighted). About the only type of mixes we do is when we are packing/camping and they are dried fruits and nuts or homemade dried soup/noodle mixes (I would try the Backpacker dot com for a recipe, most the time I just 'eye' it). We make jerky: beef, venison, tofu but it never reconstitutes up in a soup real well. Nothing too exotic or unusual by us. I guess you could also go to a backpacking shop and look at some of their freeze dried meals and experiment with creating something similar.

I feed grain type feed weekly with my egg shells, with any grains don't add a lot at a time. Less is more. I powder my eggshells and mix them into any flour type food i have and put it into a small jam jar i made into a 'salt' shaker. Then every time the worms are fed i 'salt' a little on the top. A little more than you would add if salting your own food. It gets ate quickly. Currently its powdered oat meal. Lkettel posted a recipe a while back and the worms love it. He uses whole oatmeal i just modified it to fit the holes in my shaker. I mix up a shaker full at a time. I drilled 1/4 inch holes in the lid of the jar to make the shaker and use a lid off another jar to store the mixture when not in use to keep it from drawing moisture and bugs.

Thanks for the lowdown. :) I knew, of course, the why's of it regarding the whole wheat. The three hour thing may be true scientifically, but I milled enough flour for the day (to soak for my bread, and to feed the starter a couple of times). My first encounter with rancid flour was four years ago, after my three month kitchen remodel ended up taking more like ten. My canisters are airtight, so when I opened them, I could clearly smell that my flours were rancid. Milling is fun enough to stick with. :) I got big bags of the wheat I liked for the Pizza. If those prove consistent, I'll get more of this crop. I could measure out kits, but it's really not that hard to do on the fly. I just measure the red and white wheatberries in the same bowl and mill them together. This time, I also milled a scoop of peas and added a little water. I previously tried soaking the wheat alone, but it didn't come out right. It's much better to mix up the whole recipe, inc. ascorbic acid, and let it do it's thing for at least a day in the fridge. The peazza isn't green enough (I have to try all white wheat), but it tastes great! I made my first home milled soft white wheat pastry the other day, for early peach pies. The butter crust with vinegar added was nice and flaky, though not the kind of long flakes that I'm assuming come from the bigger globule lard. Do you know anything about duck fat? I have some that needs using up and I thought I might try it in pastry. I get it about being able to plant the wheat. Opposite of when they ate their seed stores in the Little House books, because they ran out of food during the winter. :) It's just kind of remarkable that eggs and milk--the freshest things which are always kept cold--are so much more stable as powder than wheat. :) If I can find small quantities, I might try some other of your powders. As it is, I use It's Delish (a kosher brand--very pure and inexpensive) dehydrated onions and mixed veg in wet quickies like omelettes and meatballs. They absorb the juices and add flavor when one doesn't want to spend an extra twenty minutes chopping and sweating little chips of veg. So my honey has gone all crystalized. I zapped it enough to liquify enough for my bread, but it's mostly still a chunk. Is that something I can turn into a powder? Don't know that I would do it, but it would be interesting to know how.. For the mixes. ;)

If this is the first time for doing this and you have just over three weeks to organize and pull it off, limit what you do so that you can be sure to do it well. . Keep it simpler and you will be more successful and be able to build in the future. It sounds like you are responsible for getting pricing for the groceries, but also at least to some degree determining the menu and what those groceries will be. Pancakes, butter and syrup are given. Do you want to provide vegan or GF options or figure that GF folks will expect pancakes not to be their thing and be satisfied with generic pancakes being vegetarian? If you do decide to provide GF and/or vegan options, I would say so on any publicity for the event. Since it is a dinner, you could consider adding eggs for more protein/substance, and it could be a GF option. Scrambled are easiest -- and you may be buying eggs for the pancakes. Bacon is great, but it is harder to cook a lot of it to correct doneness and it is messier. Sausage or ham are easier to deal with for crowds. Since this is Shrove Tuesday aka Fat Tuesday, it might be fun to have whipped cream, chocolate chips and some berries. The baked apples sound good too, but both of these could reduce baked good sales if you want to add the bake sale on the side. Decide whether you would rather have just the dinner and both provide and charge a bit more or do the bake sale. I have also seen dessert auctions where towards the end of the meal, people bid on a whole cake or pie. This works best with family events where folks tend to come for the entire event rather than just come, eat and go. You could adapt the idea to coffee cakes, muffins and other take home items since many will have had all the sweet they can handle with pancakes and syrup -- with or without whipped cream, etc. You can do some pricing online. Sam's allows you to shop online and pick up at the warehouse, so you should be able to shop and price their options online. I think Walmart does also, though not all items may be in stock at the stores, so you might have to order in advance. Costco has different pricing online and I'm not sure they have the same order and pick up. They also don't typically give prices over the phone. If you were starting 6 months out, you could do a lot more research (mixes, scratch recipes, stores, etc. -- and maybe drive yourself nuts with it all, but given what you said about Krusteaz, I decided to take a look. Interestingly, Sam's and Walmart both have Krusteaz Buttermilk complete 10 lb bags with pricing shown online -- and Walmart runs slightly cheaper than Sam's -- about $7.50 vs $8. The info says that makes 240 pancakes (not what size) and all you add is water -- so that is your total cost for pancakes. The nutritional info says 90 servings per bag -- I'd guess you might do larger pancakes for dinner and maybe serrve as few as 50 guests peer bag -- but that's still 15 cents per person. And Krusteaz will reimburse half of that? I would go buy a smaller box of the mix and make a test batch this weekend. If you are happy with them, I'd stop worrying about the pancakes and move on. You can hardly make it easier or cheaper than that. Move on to sausage or ham, syrup, butter, plates, napkins, forks and knives and beverage options (since it's dinnerr, you can get away with iced tea, lemonade and water -- maybe add coffee) then decide if you want to add anything else. Have you set a price for the dinner? Do you have any idea how many people you might be serving? Will you sell tickets in advance (helps you can get an idea -- rough idea if you also do at the door sales)? I think you probably have enough to deal with without trying to get sponsorships or donations -- I would consider those things to consider adding next year. Those things take more time than you have to do successfully. You often have to go back, call and follow up a number of times to get an answer or work out details. Have I made this long enough to lose you yet? LOL Sorry

If it is the Krusteaz brand, I just discovered they have a recipe central section at their main site. You select the type of pancake mix you bought and there are recipes to make using it. I bought the buttermilk - and after seeing the list of recipes, I won't be giving any away the next time I buy it! :-)

Just a guess, but if the pancake mix doesn't make great pancakes, the chances are that anything else you make will also not be as good as homemade/scratch.

Pancake mix is a simple fish batter... use beer rather then water.... dip fish fillets in it and fry until done.

Perhaps make up a pitcher of batter and dedicate yourself to eating pancakes for awhile. I know it keeps in the fridge for a couple days so you can quickly warm a pan and pour a cake. Iron frying pans don't need grease for pancakes!... get it hot and pour one on. Nothing sticks so it cleans with a wipe of a paper towel.

I'll eat stuff that is less then delicious if it is quick and easy... like McWendyKing. Dolly eats lots of stuff I find inedible... maybe you have a hungry dog? I KNOW why the one fast food place features a dog in their commercials.

Lyra beat me to it but that's what I was gonna say. When I posted recently looking for a good beer batter recipe for fish & chips, someone suggested pancake mix & beer. I didn't try it yet because I tried a recipe someone else posted that time, but it's on my list to try next time I get in the mood for fried fish.

OTOH, you are probably best served by returning it like Peppi suggested if they are willing to take it back!

Maybe it could be used in Karen's sugar cookie recipe in place of the Jiffy Baking Mix:

2 cups Jiffy Mix
2/3 cups sugar
1/3 cup milk
5 Tbsp.soft shortening
1 egg
1 tsp. vanilla
1 tsp. almond extract

Roll into 1 1/2 inch balls and press slightly flat with a sugar covered glass.
Bake at 350 degrees for 8-10 minutes.

Then just like the above cookies, I use icing made with powdered sugar, butter, a little milk and 1 tsp. of almond extract.

Well, we probably already made enough meals (for 6) about 10 times or so. I would feel kind of bad saying, "yeah, we don't really care for it, sorry a good chunk of it is missing". I will keep it in mind next time though. 30 lbs - for real. I though my 10 lb bag was massive. Thanks for the tips. Will check out the website too. I do plan on making fish tacos tonight so I will batter my fish with my pancake mix. The mix isn't bad but I do find it a little on the bland side. Maybe some vanilla will help? Def. will make the sugar cookies too as I want to make some fall leaves to decorate.

cookie, Dad used to have me buy that Krusteaz pancake mix for him whenever I went to Sam's Club. I didn't like it but he did.

I found it was palatable if mixed with some dried cherries and a handful of pecans, or chopped apple and pear and served with sauteed apple slices and I often tossed in a couple of spoons full of ground flaxseed too.

I couldn't do anything about the mix, but I tried to add some fiber and get rid of the copious amounts of syrup Dad thought he had to use. He learned to like the fruit and nut pancakes with homemade applesauce as a topping, so that was better.

They were definitely too bland for me on their own.

Cookie:
Try adding couple of things in your next mix.

For a 2 cups of milk batch,

Add 1/2 cup of sugar.
2 teaspoons of Baking Powder
2 Heaping tablespoons of Good Vanilla Flavor
an Italian pinch of Salt
2 eggs separated
1/3 cup of Vegetable Oil

Mix all the dry ingredients together, into a portion of your pancake mix.
**************************

I do this first so I don't have to clean the beaters.
Add 1 teaspoon of Sugar to the Egg Whites and beat until
stiff, with a hand mixer.

Into the milk, add the egg yokes, Veg. Oil, Vanilla, and beat this with the mixer.

Add the liquids to the dry ingredients mix well and add enough of the pancake mix to make a thicker ( not runny ) Batter.

Fold in the beaten egg whites.

You're ready to fly.!!! Save me one.

Try subbing a 1/2 cup of WW Flour to the mix.

For " Waffles " make the batter a little stiffer, to where you have to move it around with a spoon.
That way it won't run out of the Wafflebaker.
I turn the heat all the way up on the Wafflebaker.
