Comments (17)I agree with eating more to lose at times. I try to start the day with some protein, a bread and some fruit. If I don't eat some protein I seem to get hungry sooner. A convenient breakfast for me would be a frozen pancake or waffle, lite sausage links or a piece of ham and a piece of fruit. Sometimes an egg, two strips of bacon and toast. Many times I eat lunch for breakfast and breakfast for dinner. Lunch is a tuna sandwich on a roll with a salad's worth of greens on top, Sometimes a roast beef or turkey sandwich or a small burger or a Lean Cuisine meal. I don't care for processed meats. Fruits and veggies as needed for hunger. Dinner is standard meat,veggie and starch but portion controlled. If I eat potatoes, pasta or rice I skip the bread. If I don't, I have bread. Snacks are usually chewy granola bars, fruit and grain bars, fig newtons or occasionally a "good" cookie like oatmeal. I eat ice cream almost every day, but measure out 1/2 cup. For crunch I measure out dry cereal or pretzels. I use sugarfree jello sometimes and clear veggie based soups to fill up when I'm on a "can't stop eating binge". I "trick" my sweet tooth by using healthy choices. For example I will slice a banana on a hot pancake or waffle, sprinkle with a little cinnamon sugar and add a dollop of whipped cream...banana cream pie thats good for me. For apple crisp I nuke a sliced apple sprinkled with a bit of cinnamon and sugar and top it with crushed honey nut chex cereal. I don't get enough dairy since I'm not a milk or yogurt person, so I take calcium. I do eat cottage cheese and cheese though. The little Babybell cheeses are a good snack at 70 calories each. That's pretty much how I eat and as long as I don't get carried away with restaurant portions or eating too much fat at one meal it seems to work for me. Anyway thats what I eat. I've never made spaezle and have no idea what rouladen is but it sounds like beef something???? Please 'splain! Whatever it is, if you made it I know it has to be good. Sue, how is that baby Alyssa? She'll soon be a year old already! I know you have such a good time with your kids and now that sweet grandbaby. I envy you having you kids so close. Keep on enjoying! Comments (11)Love the smashers. I had some left over from a mixed veg roasting. Had them with eggs the next morning. Roasting actually gets them a bit dryer. A different style than the boiled. But i've done them all the ways since an article in a magazine a few years ago. Seems many hopped onto the idea. I just smash then with a folded clean kitchen towel with my palm. The wide potato masher gives all the lifted crusties and i do that if served alongside, say, a steak. For little potato cakes seared in a cast iron, skin-on new potatoes, i like them to get over crisp, so i attempt to keep them in a pancake shape. Some use the bottom of a heavy pan to smash. Yes, addicting. Crispy like a potato chip outside and creamy in the middle. They could be roasted and even smashed ahead, even pan roasted ahead of time and re-heated, but the boiled method with the potato smasher will be too moist and fall apart most likely. Comments (104)Thanks for the positive feedback on the teriyaki tacos, and for the eggs and salad for breakfast I posted earlier. Recent meals: Chinese okra done with an Indonesian flair - contains scrambled eggs, Chinese chives, been sprouts and so forth. Chinese okra is not really okra, but in the curcubit family, and tastes very mildly of cucumber. Naturally slime-free. Chinese okra looks like regular okra on steroids - see the second photo. Mini lamb sliders on a bed of lettuce and watercress. I seasoned the sliders with salt, pepper, garlic, turmeric prior to shaping. True okra, done Paleo style: I used coconut flakes to batter them with. There are recipes that use ground almond, but I've developed a sensitivity to many tree nuts. To make them less fat-centric, I also baked them rather than deep frying. I also tested out a way to remove the slime: slice them in half lengthwise, and make sure they are dry when you go to batter and cook them. (Rinse them earlier and allow them to dry.) Here's my offal moment: lamb sweetbreads, with bell pepper, onion, and topped with capers and scallions. Seasoned with lemon, thyme, salt, pepper, garlic. I'm sure this one is not going to be on most people's priority list, but we grew up with offal long before it became "trendy", so I never developed the "ick" factor reaction. (Why I have that reaction to cottage cheese, I just don't know!) Sleevendog, those artichokes look wonderful! (one of my favorite veggies, up there with asparagus!) As well as the miso noodle bowl!
