Simulating the flavors of 'Mexican rice'

Have you ever used a convenience food (e.g., a flavored rice package) and then "deconstructed" it so that you could substitute all the ingredients from scratch? I could use some help, especially with the seasonings!

I've had little exposure to Mexican/southwestern cuisine, and I don't normally like hot or heavily seasoned foods. But I discovered Knorr/Lipton's "Fiesta Sides Mexican Rice," and I enjoy its flavor a lot. I've used it for stuffed peppers, and lately I've been making a concoction with ground meat, chopped onions, green peppers, mushrooms, stewed or diced tomatoes, and the Mexican rice/orzo blend. It's easy, delicious, and addictive! But it's rather high in sodium and calories, and maybe I could do better by using plain rice and inventing my own recipe.

The ingredients listed on the package include red, green, and jalepeno peppers, onion and garlic powder, unidentified "spices," and natural flavors. Any suggestions on how to simulate the seasonings? Do you have a T&T recipe for something similar?
