Cooking chix breasts for soup?

I want to make a curry rice soup recipe today and take some to my folks. I need a cup of shredded chicken breast so I took one piece out of the freezer to cook. I thought about slicing it in half to make two thinner pieces, then a quick saute in a pan with a little olive oil?

Any other ideas on the best way to cook it so it is not too dry?
