I haven't made this but found it in an old quantity cookbook. You could probably substitute chicken for the pork.

PORK CHOP SUEY BAKE - 25 servings

6 lbs. boneless pork, cubed
2 Tbs. salad oil
3 1-pound cans mixed Chinese vegetables, drained
2 cups chopped onion
2 cups chopped green pepper
2 cups uncooked long-grain rice
4 cups milk
1/2 cup soy sauce
4 10 and 1/2 oz. cans condensed cream of mushroom soup
2 cans chow mein noodles

In a kettle or Dutch oven brown meat in hot oil; sprinkle with 2tsp. Salt. Drain off excess fat. Divide meat evenly between two 13X9X2 inch metal baking pans. Combine vegetables, onion, pepper and rice. Add half to each pan.

Gradually add milk and soy sauce to soup, stirring until smooth. Add half the soup mixture to each pan and mix well with meat and other ingredients.

Cover and bake at 350 degrees for about 2 hours, stirring occasionally, until rice is done. Uncover; sprinkle one can noodles atop each pan. Bake 5 minutes.

If you are not opposed to using "cream of..." soups, these are both recipes I used to make often many, many years ago when my kids were little.

Baked Chow Mein

1 c rice, washed
2-1/2 c boiling water
1 lb ground meat
2 c celery, chopped
1 large onion, chopped
1 T brown sugar
1 can cream of mushroom soup
1/4 c soy sauce (or more, to taste)

Pour the boiling water over the rice and let stand.

Meanwhile, brown meat, add onion and celery and cook until vegetables are almost tender. In a large casserole dish, add meat & vegetables, rice & water and remaining ingredients. Mix well. Bake 1 hour at 300F.

Chow Mein Casserole

1 lb ground beef
3 T butter
1 c chopped celery
1 large onion, chopped
1-3/4 c raw rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 can water
Chow mein noodles

Brown ground beef in butter. Mix all ingredients together and place in a casserole dish. Bake at 350F for 1 hour. During the last 20 minutes of baking time, top with chow mein noodles.

These are not quite what I was looking for though, and perhaps it is because I asked for Chow Mein - since that is what Panda Express calls it. Some research shows that what I really want is Lo Mein. I am going to have steamed rice as a second side so I donâÂÂt want rice in this dish.

IâÂÂm thinking along these lines⦠Sauté some packaged slaw mix (keeping it simple and easy), until tender. Cook noodles until less than done by 1 minute, rinse and toss with a bit of oil. Mix a sauce together. All this can be done ahead of time. At the event, heat sauce in Roaster Oven until hot and just before serving, toss in veggies and noodles to coat with sauce.

What do you think? Now I just need a âÂÂsauceâ recipe. :-)

garlic
ginger
soy sauce
sugar
toasted sesame oil
red pepper flake to taste
corn starch

Many have created a mock of the recipe. Read through a few of them for getting the right quantity for a crowd.

-remove a cup of the hot stock from the pot and stir in the cornstarch to make a slurry and to avoid it clumping. Stir it back into your sauce. An easy do-ahead sauce.
