Home Cookin Chapter: Recipes From Thibeault's Table

Cream Cheese Danish Coffee Cake

1 c sour cream
1/2 c sugar
1/2 c butter
1 t. salt
2 packages dry yeast (4 1/2 t.)
1/2 c warm water
2 eggs beaten
4 c all purpose flour

Over low heat in a small saucepan, heat butter, sour cream , sugar and salt until
warm and sugar is dissolved. Cool to room temperature.
In large mixing bowl, dissolve yeast in warm water.
Mix sour cream mixture with yeast and add beaten eggs and flour. Will be a
very soft dough. Put in fridge overnite to rise. (May be done same day. Put
in fridge for about 2 to 4 hours, and then proceed.
Turn dough out onto a well-floured surface and knead 6 or 7 times. Divide
dough into 4 equal pieces and roll each piece out to 12 X 8 inches.
Spread 1/4 of filling on to each piece and roll jellyroll style from long
side. Pinch seams and ends to seal. Place seam side down on buttered baking
sheet and cut X's in top. (About 6 X's) (Danish should be slightly flatten, and about 3 1/2 to 4 inches wide and about 12 inches long.

Cover and let rise until about
double in size -approximately 1 hour Bake at 375 for 20 to 25 minutes or
until golden. Let cool on wire racks,

Filling
2 packages 8 oz. cream cheese
3/4 c sugar
1 egg beaten
1 t. vanilla extract
1/8 t. salt

Filling: To make filling beat together cream cheese with sugar, add egg and
vanilla extract and salt

Glaze
2 1/2 c confectioners sugar
1/4 c milk
1 t. vanilla extract
toasted sliced almonds.

Combine the first 3 ingredients for
glaze and drizzle over loaves with toasted almonds

Ann,thanks for the quick response.Is this fairly easy to make,I have never attempted something like this before.I am kind of nervouse,but I know my son and husband would love it.Thanks for your help.

Ann, they used to be only cinnamon sugar danish doughs but they have branched out now and cream cheese is a big favorite. So if Kandm has only had dry ones they were just made with a sweet dough and not the real danish type ones, so yeah, your recipe is perfect. A lot of places do just make a sweet bread dough. I have made it with almond and apricot fillings. I used the canned filling, by Solo. It's very thick, so it didn't run all over the oven. King Arthur Flour also sells some. Both were very well received. I agree a berry puree might be too thin, even with fresh berries added. But I'm sure there are great recipes out there for fillings that would be just what you need.

I tried a recipe this weekend for a yogurt cake that has an orange glaze on it. It's wonderful! I made 3 mini loaves from this recipe: Vanilla Yogurt Cake with Orange Glaze 1 egg 1 egg yolk 1 cup granulated sugar 1 vanilla bean, seed scraped out, pod discarded 1-1/2 tablespoons vanilla extract 1/2 cup vegetable oil zest of 1/2 orange 1-2/3 cups all purpose flour 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/2 teaspoon salt 7 oz. Greek yogurt 4 tablespoon orange juice, divided Preheat oven to 350F. Spray two 6 x 3.2 x 3.4 inch loaf pans with baking spray. Or coat with butter and flour. Using a stand mixer (or a large bowl and and electric hand mixer), beat together the egg, egg yolk, and sugar on medium-high speed, until it turns pale yellow, about 3 minutes. Add the vanilla beans, vanilla extract, oil and zest, beat another minute, until fully incorporated. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside. With the mixer on low speed, add half the amount of dry ingredients. Then add half the amount of Greek yogurt, and 2 tablespoons of the orange juice. Add remaining dry ingredients and followed by the remaining yogurt, reserving 2 tablespoons of orange juice for brushing on loaves when hot. Remove from mixer and finish mixing by hand using a spatula until all of the ingredients are fully incorporated. Pour into prepared pans and bake for 35-40 minutes. Remove from oven. Using a toothpick or large wooden skewer poke holes into the cake. Using a pastry brush, brush orange juice over hot loaves. Let cool for 10 minutes and remove from pan. Place on wire rack to finish cooling. When cool, glaze cakes. Orange Glaze 2 cups sifted powdered sugar 6 tablespoons orange juice zest of 1/2 orange Combine the two ingredients together with a whisk. Pour over cakes. Shelley, it's not difficult at all. I made it twice last week!! It makes 4 danishes, they wrap well, they freeze well, and they make great gifts! :D

Follow the recipe and you won't have any problems!

I have the dough in the refigerator and it is VERY soft,maybe slightly wet.Is this how its supposed to be.You definately coulndt use it now.I hope I havent messed it up.

I've never known it to be wet, yes it's a soft dough to start, softer than a "typical" bread dough. But seems to "Firm" up overnight.

I made them last weekend in individual pastries..Usually I make the 4 loaves, and freeze a few to "keep" them safe..LOL

I've got some almond paste in my freezer that needs using up. I was thinking I'd love these with an almond filling. Does anyone have a good recipe for that? I found one online, but T&T would be nicer.

Or maybe even chocolate almond, as long as I'm asking.
