Tell me elk tastes like chicken!!! Please! lol DH is going elk hunting in 2012.. he's already talking about buying another freezer.

I'm really not crazy about wild game meat.

The meatloaf and baked potato I had tonight is more my speed.

I like Lpinks idea of an antipasto. Everyone picks what they want and it is really easy to assemble. Here is a "do ahead" recipe that I make a lot for times like that.... Marinated Antipasto 3 large carrots, cut diagonally into 1/4-inch-thick slices 2 large handfuls fresh green beans 2 cups broccoli florets 2 red bell peppers, roasted and cut into strips 2 yellow bell peppers, roasted and cut into strips a 12-ounce jar peperoncini drained well 3/4 pound black or green brine-cured olives or a ombination 3/4 pound marinated or plain bocconcini (small mozzarella balls, available at specialty foods shops and some supermarkets) 1/2 pound pepperoni or soppressata (hard Italian sausage, available at Italian markets, some butcher shops, and, some specialty foods shops), cut crosswise into 1/4-inch-thick slices and the slices quartered 2 7-ounce jars marinated artichoke hearts, rinsed and drained well 2 cans Hearts of Palm, cut into 1/2 inch lengths 1/3 cup minced fresh parsley leaves plus, if desired, parsley sprigs for garnish Vinaigrette Dressing  about 2 cups, use your favorite recipe In a large saucepan of boiling water blanch the carrots for 3 to 4 minutes, or until they are crisp-tender, drain them, and plunge them into a bowl of ice and cold water. Repeat for the Green Beans and Broccoli. Let the vegetables cool and drain them well. In a large bowl toss together the carrots, Green Beans, Broccoli, the roasted peppers, the peperoncini, the olives, the bocconcini, the pepperoni, the artichoke hearts, the Hearts of Palm, Vinaigrette dressing, the minced parsley until the antipasto is combined well and chill the antipasto, covered, for at least 4 hours or overnight. Transfer the antipasto to a platter, garnish it with the parsley sprigs, and serve it at room temperature.

Pick Steak For Grilling

I know the LC pieces I have warn against heating past medium. I've pushed the envelope a bit occassionally, but I'd be hesitant to heat it "screaming hot." Lodge or other CI is cheap, LC is not. I'd not risk it. I like to sear in a skillet, too, One thing I've found is that this method is not ideal if there's a bone involved because the meat quickly shrinks enough to create a small airspace next to the bone. Wonder if others have had this problem. I also tend to like my strip side slightly more done than the tenderloin side, so that presents issues of its own. So I rarely buy Porterhouse, but I'll be happy to order it at a steak house that knows what they're doing better than I do. :) John - Glad your meal worked out. My guess is your "pretty ok" is "pretty excellent" by most people's standards. Interesting about your eel concoction. MC@H mentions using fish sauce to mimic some of the nuances of aged steak, but I don't recall if they marinate it for a while, or how long. Unfortunately I can't locate that cookbook (or much of anything cooking related) to look it up, as my kitchen is still not back together.

How big is your steak?
Q

We eat meat as our protein source 3-4 times a week. Our portion sizes vary between 2-5 ounces. Fish would be the largest & beef the smallest. The smaller 2 oz. size is what we use for sandwiches. We split a bone-in pork chop & often there's a bit that goes uneaten. Half of a BSCB feeds us both with enough left for 1/2 a sandwich each the next day. We cut 6 oz. steaks & share. We also eat less meat than, say, a decade ago. Both of us have decided that we feel better with less meat in our diets. I'm sure to some extent portion depends on age, sex, activity level, etc. but those portions at Smith and Wollensky's are more for show than providing their clientele with a healthy meal, IMO. /tricia

I Need Your Best Swiss Steak Recipe...

Here is the recipe I have used for years. IMO, it is just the best. THE BEST EVER SWISS STEAK 1/2 cup flour 1 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon garlic salt 2 pounds round steak, tenderized 3 tablespoons cooking oil 1 clove garlic, minced or pressed 2 cups chopped green pepper 1 cup chopped celery 1 cup chopped onion 2 14.5-oz cans diced tomatoes, undrained 1 beef bouillon cube 1 cup boiling water 1 tablespoon soy sauce 1 teaspoon salt 1/4 teaspoon pepper 1/4 cup cold water 2 tablespoons flour In large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper, and 1/2 teaspoon garlic salt. Cut round steak into serving size pieces. Place in bag with flour and coat very well. Heat oil in Dutch oven; put the flour left from coating the meat into the boil, add meat and brown. Add garlic, green pepper, celery, and onion; cook and stir for 10 minutes. Dilute the beef bouillon cube in 1 cup boiling water. Add undrained canned diced tomatoes, diluted bouillon, soy sauce, 1 teaspoon salt, and 1/4 teaspoon pepper. Cover and bake at 325 degrees for 2 hours. Remove from the oven and place on a top burner. In a small bowl, combine water and 2 tablespoons flour; stir into juices. Bring to a boil over medium heat, stirring constantly, until thickened. Yummy!!! Serve with mashed potatoes, salad, Baked Carrots, and biscuits. BAKED CARROTS 1 pound carrots cut into sticks* 1 bunch green onions with tops, chopped 1 cup boiling water 1 chicken bouillon cube Dilute chicken bouillon cube in the 1 cup boiling water. Place carrot sticks and chopped green onions in an ungreased 1-quart casserole dish. Pour bouillon over all. Cover and bake at 325 degrees for 1 hour. *You can also use a 1-pound bag of baby carrots to save time. Serve with The Best Swiss Steak Ever, mashed potatoes, salad, and biscuits. If preparing to serve with Swiss steak, put in oven along with the Swiss steak during the last hour of baking.

I've never had elk but I probably wouldn't like it. I don't like moose.

I've never had elk, moose, giraffe, crocodile, emu, or zebra! I do like venison (when fixed right and if the deer is corn fed :-) and pheasant... guess there's a good chance I'd like the elk too.

I have never had elk, although it is readily available here. There is an elk farm just a few miles away and a local eating place features elk. There is also a bison farm very close. I have eaten venison. There is no way I could eat a zebra! That would be like eating my horse! :(

Drats!! I was really hoping it tasted like chicken. lol

DH will probably get a lot of sausage and snack sticks made from it... the rest will probably be a mix of ground meat, roasts and steaks. DH has been going antelope, mule deer and whitetail deer hunting for the past few years... so I have got somewhat used to the deer meats. All of the sausages are pretty good, but they are mixed with pork usually.

Actually, if wild game is processed and prepared properly it is exceptional. The problem with most hunters is they go hunting, kill the game, field dress it and throw it on the fender of the truck and drive it 200 miles to the processing plant. There are glands just under the skin and deep in the muscles that if ruptured or cut during transport or processing will give the meat a nasty, nasty taste. My step father handled his game just like that but he grew up like that and liked the taste. I wouldn't eat venison until I was grown and married and hubby showed me how to treat the game. We processed all our own and were careful not to contaminate the meat. You also have to remember that wild game has very little fat so consequently is low in cholesterol. Much better for you than beef but you cannot over cook it. The longer you cook it the tougher it gets. Chicken fried backstrap? Ummmm Good. I've even had it prepared tableside in an upscale restaurant just like Medallions or Steak Diane.
