Maybe a vegetarian shouldn't cook pot roast!

Today is DH's birthday, but we both have to work - he until 9:00 tonight, so I did his birthday dinner yesterday. Unfortunately, I had a Dr. appointment at an inopportune time - 3:00 in the afternoon. DH wanted pot roast for the dinner and apple pie for his birthday "cake".

Well, I got out the old Joy of Cooking I used to use when I made stuff like pot roast. It said to brown the meat and then bake it at 300 degrees for 2 or 3 hours. It said a lot more than that, but I don't have time to go into the details about the veggies and stock that goes with it. I had to run an errand after my appointment, so I didn't get the 3.77 pound chuck roast into the oven until after 5:00, with dinner planned at 8:00. Well, I stuck in a thermometer, one of those with the long wire attached so you can keep the thermometer in the meat while reading the temp outside of the oven. I had it set to medium, which is 160 degrees. It beeped at around 7:30, which was perfect, and allowed time to let the beef sit. Well, clearly, 2 1/2 hours wasn't enough time, and 160 degrees is not medium, but rare. The meat was very tough and quite red. It was rare, not medium. My niece and her fiance came for dinner, and it was the first time her fiance had ever come over. I was quite embarrassed. Everyone was polite, but clearly, the meat was almost inedible. DH loved it anyway, and they said it had good flavor. That's a good thing, since they had to chew it a lot! lol.

At least the apple pie was a hit. And, the brussels sprouts were appreciated. and everyone liked the kale, lettuce, pear, walnut and blue cheese salad. Linda, I even splurged at bought Maytag Blue Cheese. Oh, and the rolls turned out.

Oh, well. maybe I should stick to veggies.

What counts is DH loved it all.
