Have you ever heard of YELLOW suet?

One of our supermarkets sells real suet, which I buy for the birds. (The other supermarkets sell soft beef fat, the kind that forms under the skin, and call it suet.) When I went to buy it recently, it was yellow. Not yellowish, but a rather bright yellow. I asked the butcher what gives, and he said it was "extra fatty." That made no sense at all. I guess my face reflected that, because then he said it depends on what the cows are fed.

I kind of doubt that the cows were fed curry or saffon, so I'm rather suspicious of the yellow suet. I bought a package, but am hesitant to feed it to my trusting woodpeckers.

Have you ever heard of this?

"Try to get kidney (white) suet as it has a better flavour. Tallow (yellow suet) is better than no suet at all - but, the kidney suet is best."

They were talking about a chili recipe (for human consumption) though and not for bird food.

I make my own 'suet' by melting 2 cups of lard with 2 cups chunky peanut butter and then adding 2 cups wheat flour, 3 cups regular oatmeal and 3 cups cornmeal (all approximate measurements). Pour it all in a wax paper lined cake pan and put in the fridge to harden. That makes 6 nice sized cakes that will fit into one of the commercial suet holders. Wild birds (and squirrels unfortunately) like it! I put out a cake every day all year round. This won't melt even in hot weather.

We make our own suet, too. 2-3 lbs. melted/liquified lard with 4 cups bird food/seed, 1 cup peanut butter, 1 cup cornmeal, 1 cup raisins, and 1-2 cups cornmeal (approximate measurements). We freeze it in a baking pan lined with freezer paper and cut it into 8 large cubes. Our bird buddies love it!

I suspect English may be a second language to the UBC OP.....'foment' means to incite, as in riots or rebellions. 'Fermented' bone soup makes a great deal more sense :-) And aerobically is spelled incorrectly and is used incorrectly as well - I'd guess he/she meant anaerobically, unless they somehow pumped oxygen into the mix. I bet the stuff stunk to high heavens......think rotten animal parts. Yuck!! Fermented bone meal seems to be popular with home growers of wacky tobacky but they often have some pretty wacky ideas about growing anyway. Have no idea what it might do for rhododendrons or other acid loving plants......can't think of any reason it would be especially beneficial. Or beneficial enough to endure the stink.

Cup, I think the pattern is pretty and girly enough, if a bit busy. It's not what I'd choose for "formal", but if you have some Victorian style elements, for instance, it should do well. You can have any glass tempered. The big problem with cabinet glass (as I discovered to my dismay!) is shipping, especially if the lengths are long. Do you live in or near a city? If so you can call around to see if anyone carries your glass. I first saw my glass at a place very near my house, but then they couldn't do it for some reason (I actually think "crazy" was in there somewhere). The cabinetmaker's glass guy wanted a humongous amount extra to have it tempered. Benheim, online, wanted the same amount because it would have to be crated and shipped by common carrier (like furniture) because it was too long for a parcel service. I had a very emotional week whining about it on GW. One of our members here was very helpful. He found a distributor within an hour's drive of me. Also that this pattern is all made by the same place no matter what the name and who sells it. I was in the middle of planning to use my GC to buy it (wholesale) but transport it myself to the temperer, when the GC had the thought that maybe he should ask his glass guys. (Ya think?) They were coming to install my BP backsplash (mirror), and they carry it, so they could just bring it instead of anyone doing any crating. Sigh. Such a simple answer! If you can't find a local shop that carries it, it might be best to let the cabinet company do it. They're crating and shipping your cabinets anyway.

How much time? 6 months. Yes, they need to get past a certain date not to incur higher taxes. It's undeveloped, so nothing to deteriorate while waiting, just living in limbo in a rental with everything we own packed up for 6 months. We haven't sold our house yet. Our area isn't as hot as most parts of the country, but we think our house should sell within a month. Our plan was to buy the land and put in utilities and our 5th wheel trailer on it to live in while we had the house built. Now, none of that can be done for 6 months. We would have to find a short term rent house, and those are scarce here.

I found this, from a book for housewives written in the mid-1880s:

BEEF.--Good beef has an open grain, and a tender, oily smoothness; a pleasant carnation color, and clear white suet, betoken good meat; yellow suet is not so good.

(Love that "carnation color"!)

And this, from a "Garden and Hearth" article on bird feeding:

Birds do not care for yellow suet which contains stringy tissues.

So I think I'll trash the yellow suet. I'm intrigued with your homemade recipes, though. I see a project coming up . . .

Grass feed beef tends to have yellower fat due to the carotene in the grass that they eat.

I also buy fresh/frozen suet from the grocery store for the birds. They love it and it seems to attract all kinds of birds. They seem to go after the 'raw' suet directly from the butcher pack faster than the processed cake suet I buy at the Seed & Feed.

I must say that I have never seen yellow suet. You could offer it to the birds and let them be the judge. I have, just two weeks ago, made my first 'Gourmet Suet'. I melted a block of suet from the grocery store in a pan over a very low heat and mixed all sorts of goodies into the melted liquid...peanut butter, cranberries, walnuts, corn meal, oatmeal, Finch Mix. I have offered it to the birds but they still go for the raw suet first. Hummm.

But, as far as the yellow suet goes...I can't help you. I'm sure the birds will let you know if they like it.

This is a little off-topic, but does concern suet. A friend of mine who ran a restaurant in Tombstone for many years said that in his day, good beef always had soft, yellow suet or tallow, not the hard white fat you see now. To put it as gently as I can, he said it resembled snot. He used to save bits of it until he needed to run an errand, then drape it down over his upper lip--and walk up town that way. It was even more fun when one of his daughters had to go with him. He said it sure got him some strange looks. Gee--I wonder why...
