Maybe the very very first thing will be cookies, which could maybe even happen before cabinets go in (if they get the new range in position). But the two things I have really missed making are homemade pasta and risotto. I love making my own pasta, it doesn't take long and is really delicious.

I am going to have to get used to being able to use more than one burner at a time :-). In my 2-year-old "temporary" kitchen, I couldn't run more than one "appliance" at the same time. If I used microwave+ electric kettle, the circuit breaker flipped. If I used hotplate+ microwave, the breaker went. If I used kettle+hotplate, same thing. So now all my cooking is sequential rather than multi-tasking.

Oh it's gonna be so much FUN to start cooking properly again !

actually up until today we had a stove in our cellar so I was able to cook, but nothing major because it really is a PITA to try to cook while watching for spiders. Mostly what bothered me was the challenge of prepped in one spot, cooking in another (with no counter space) and carrying food back and forth.

I'm just dying to have everything in one place, fridge in the same room with counters in the same room wih stove in the same room with sink.

I'll probably bake bunch of pies for all my friends who keep bringing me real food since I got back from the hospital ....

Then I'l make a chicken breast-potato dish (baked together with whipping cream poured over it) ... can't wait!

It's funny, I, too, really want to bake. And that will be the one thing I will most unlikely be able to do as our ovens, which were promised to arrive in November '07, are evidently not even going into production until the last week of February '08. I'm not sure how funny I think this is. Right now, not very.

But I love to bake. Love it! We're vegan and since our kitchen was gutted this has been my version of porn: Vegan Cupcakes Take Over The World. I want to make cupcakes!

I'd love to make pizza.

I'd love to make sugar cookies with my three year-old (he loves using cookie cutters and colored sugars) and Nanaimo Bars just for me (I'll share, begrudgingly).

I'd love to stop eating so much processed food. But on the bright side, I've lost weight since the remodel started (really hate processed food!), and if I start making my above list, you can bet every pound will find its way back to me!

It's so fun to read others cooking dreams -- I'm looking forward to reading how everyone's forays are.

I found our difference- I am so far from a vegan, but I totally understand why one would become one- just cannot ever give up meat!
We baked biscotti over Christmas, and some boxed cakes- that is the extent of my baking. I love to cook however- It is soooo nice to be able to cook again!
You actually lost weight??? I gained weight, and now I'm struggling to lose it, I ate so much PB&J during the remodel, that stuff really sticks to the hips!

OMG- Flatcoat 2+ years??? How in the world are you coping? That is such a long time to be without a kitchen- I wish you all the luck getting that project done so you can enjoy a nice bowl of pasta :)

steamed mussels, tacos, stuffed Portabellos, spanakopita, corned beef or potroast, eggs tarragon, chicken tandoori, sushi, jiaozi, green tea muffins, belgian waffles, some sort of beef with horseradish sauce, chicken and dumplings, steak hash, potato rolls, stovetop (not microwaved) oatmeal, salmon teriyaki, orzo with spinach and red peppers, Mediterranean jerk chicken, chicken with tomatillo salsa... Hmm. That's not all going to be the first meal. I'm betting it'll end up being something horribly normal like the oatmeal. I'm truly looking forward to being able to prepare an entire meal at once rather than sequentially.

Yup. Plus last night I started making a shopping list of all the new cookware I need (simply 'cos I want it), and all the drygoods etc I need to buy to restock my pantry. I never really unpacked all my old drygoods since moving into this house 2 years ago (since there was essentially no kitchen), so now I figure I just have to throw it all out and start fresh.

HOMEMADE PIZZA!!! With lots of people to come eat with us . . .

I think I'll be cooking whatever Curtis Stone tells me to cook since I'm counting on bumping into him in the market and having him bring me home to teach me how to cook. :)

dorothyct -- I love you! When you're done with him, send him on over to Boulder -- I'd like someone with a crew to watch my children, get me all dolled up and make me a three-course chocolate feast (because I'd tell him that's what my husband loves, even though my husband doesn't care for sweets -- shhh, don't tell!).

I have no idea! I just want to get my kitchen done...preferably before Easter since my parents are coming to stay for a couple of weeks!!!
