Apple Dumplings with cracked sauce

OK, my DH swears his mother made whole apples, filled with raisins, butter, and brown sugar, covered in pastry, and baked. He said there was a "sauce" that was basted several times onto them during baking that became stiff, crunchy, and amber colored when cooled. He said he had to tap it with his spoon to get to the pastry and apple. My dear MIL is long gone, none of his sisters have the recipe or even remember the baked apples. (Isn't it funny how siblings remember differently the same events?) I can find lots of recipes for apple dumplings but none have a "sauce" that is basted over them. Can you help?

APPLE DUMPLINGS
(MORE Heart of the Home Recipes - Favorites from Capper's Weekly)
"These dumplings have a tender, flaky crust and swim in a sweet and spicy sauce." [I wonder if your MIL used the sauce to baste the dumplings?]

2 bottles (7-oz. size) lemon-lime beverage
1-1/2 c. sugar
1/4 t. cinnamon
1/4 t. nutmeg
1/4 c. butter or margarine
6 medium apples
2 c. flour
1 t. salt
2 t. baking powder
3/4 c. shortening
1/2 c. milk
6 T. sugar
1 t. cinnamon
3 T. butter or margarine

Combine lemon-lime beverage, 1-1/2 c. sugar, 1/4 t. cinnamon and 1/4 t. nutmeg in saucepan. Cook over medium heat, stirring constantly until sugar is dissolved. Add 1/4 c. butter and stir until melted. Set aside.

Pare and core apples, leave whole. Sift flour, salt and baking powder; cut in shortening. Add milk all at once and stir until moistened. Roll out and cut into six 7-inch squares. Place apple in center of each square. Combine the 6 tablespoons sugar and 1 t. cinnamon and sprinkle about 1 T. of mixture in center of each apple. Dot with butter. Fold corners of pastry to center and pinch edges together. Arrange in 9 by 13 by 2-inch baking dish. Pour sirup [their spelling, not mine] into pan. Bake in 425-degree F. oven 35-40-minutes. De LUXE APPLE DUMPLINGS (Source: Heart of the Home Recipes \- Favorites from Capper's Weekly) Submitted by Mrs. Wilfred Guenther \- Feb. 2, 1952 6 lg. apples 2 c. sugar 2 c. water 1/2 t. cinnamon 1/4 t. nutmeg 3 T. butter 2 c. flour 2 t. baking powder 1 t. salt 3 T. sugar 3/4 c. shortening 1/2 c. milk Pare and core apples. Make sirup \[their spelling, not mine\] of 2 c. sugar, water, cinnamon, nutmeg. Cook till sugar is well dissolved and add butter. Sift flour, baking powder, salt and 3 T. sugar. Cut in shortening. Add milk all at once. Stir until moistened. Roll 1/4\-inch thick. Cut in 5\-inch squares. Arrange apple slices on each square. Sprinkle with sugar, cinnamon and nutmeg. Dot with butter. Fold corners to center and seal edges. Place in greased pan. Pour sirup over them and bake at 350\-degrees F for 45 minutes. Serve with plain or whipped cream. These are delicious served slightly warmed.

I found the following recipe that I think you may be able to adapt.
Prize\-Winning Apple Dumplings rec.food.cooking/Sherry Yokim (1993) Makes 6 large dumplings I found this recipe in a little pamphlet/cookbook of prize\-winning recipes from some big fair back in the 50's. 2 cups sugar 2 cups water 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 cup butter 6 apples 2 cups flour 2 teaspoons baking powder 1 teaspoon salt 3/4 cup shortening 3/4 cup milk Combine sugar, water, cinnamon and nutmeg in a medium saucepan. Heat over medium heat until mixture becomes syrup; add butter. Pare and core apples; cut into fourths. Sift flour, baking powder, and salt into bowl. Cut in shortening with a pastry knife (or a regular table knife) until mixture becomes crumbly. Add milk all at once and stir just until moistened. Roll dough out to 1/4 inch thickness. Cut dough into 6 (5 inch) squares. Arrange 4 pieces of apple on each square and sprinkle with additional sugar, cinnamon. Fold corners to center of each square and pinch edges together to seal dumplings (make sure they are sealed tightly and no apple is sticking out!). Place dumplings in buttered baking dish. Pour syrup over dumplings. Baste dumplings with the syrup once or twice while baking at 375F for 35 minutes. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ I'm thinking that the butter in the sauce is what keeps the sauce soft....so if you left that out and basted the dumplings about every 10 minutes during the baking, you might be able to achieve a hard shell... the spices are optional, the sauce will turn darker as it caramelizes. Using whole apples, as you describe, wouldn't make a difference, other than a longer baking time needed. Nancy

Lpink, this is the recipe I use for dumplings, It has egg in it. A bit more work than the Bisquick kind, But they are good! They are the only kind I've made since I first tried them Back in the early 1980's. Dumplings (From "A Texas Hill Country Cookbook") Ingredients: 1 stick margarine* 1/2 stick butter* 2 C boiling water 2 C sifted flour (AP) 1 tsp salt** 4 eggs 1/4 to 1/2 C flour*** *All butter or all margarine can be used successfully. Using all margarine may call for a little more flour. **Plain salt can be replaced with seasoned salt you like, that will compliment your finished dish. ***This is for rolling them out. Omit if you drop them from a spoon. Method: Melt margarine and butter in boiling water. Add 2 C flour and salt. Stir & cook over low heat until mixture leaves sides of pan. (This happens quickly) Cool slightly. Add eggs, one at a time, Stirring well after each addition. (I use my hand mixer to beat each egg in.) Pat dough out on floured surface, with hands & rolling pin. Cut into squares, drop into gently simmering broth. And cook until done. A very short time. This is a pretty wet and sticky dough, so I prefer to use a small cookie scoop And just drop them into the broth, rather than rolling them out. Either way, they quite literally melt in your mouth. dumpling wrappers, potstickers, dim sum, and wontons are not synonymous. Dumpling wrappers, almost always round but occasionally square, are thicker than wonton wrappers, which are always square. potstickers are dumpling wrappers filled with a rich filling, folded over and pinched and then cooked in a very special way -- they are put onto a hot pan with a bit of oil, seared to brown and then covered in a bit of liquid to braise under a cover until the liquid is all gone and the dumplings literally "stick" to the pot. dim sum is a collective phrase for a great many "appetizer-like" foods, some of which are "dumplings" but not exactly the kind of dumplings made with dumpling wrappers. wontons refers to the thin square wrappers or to the wrapper with filling. They can be small or large and they can be boiled/steamed or deep-fried. The extra large ones are best truly steamed over gentle heat. For deep-frying, the smaller, the better. Here's my favorite "dumpling filling" recipe to put into wontons or dumpling wrappers (given to me by a little Chinese grandmother about 25 years ago in L.A.; true): DUMPLING FILLING Makes 12 to 24 1 pound ground pork -- shoulder 1/4 pound shrimp -- finely chopped 1 small bok choy -- chopped 1 egg 1 teaspoon cornstarch salt -- to taste 1/2 teaspoon sugar 2 tablespoons sesame oil 1 tablespoon water 1 teaspoon ginger root -- grated 2 stalks green onion -- chopped Chop bok choy coarsely and cook in boiling water for 5 minutes. Drain by placing in cheese cloth and squeezing out all water. Chop finely. Combine pork, shrimp, egg, cornstarch, salt, sugar, sesame oil, water, and ginger. Mix well. Add bok choy and chopped green onions. Put small teaspoon-fulls into won ton wrappers or larger tablespoon-fulls into dumpling wrappers. Boil them gently in water or chicken stock until floating. APPLE DUMPLINGS
(source: Farm Journal's Country Cookbook)

Spicy, sweet-tart apples hide under crisp pastry jackets.

3 T. butter or margarine
3/4 t. cinnamon
e/r t. allspice
3/4 t. nutmeg
1/3 c. sifted brown sugar [yes, that's what it says - sifted]
Pastry based on 2 c. flour
8 medium apples, peeled and cored
3 T. jelly
1-1/2 c. boiling water
1-1/2 c. sugar
3 T. fruit juice (orange, lemon, pineapple, apricot, etc.)
Food color (optional)

Make paste of butter, spices and brown sugar.

Roll out pastry 1/8-inch thick; cut into eight 6-inch squares. Place apple in center of each; put jelly or orange marmalade in cavity, and spread spicy paste over each apple.

Moisten edges of pastry; bring points together over apple; seal sides firmly. Roll leftover pastry; cut into "streamers" to lay across tops of dumplings.

Place in large greased baking dish, about 11x15-inches; bake in moderate oven (375-degrees F) 30-minutes.

While apples are baking, make syrup of water, sugar and fruit juice; simmer to dissolve sugar. Pour over apples; bake 10-20 minutes more, BASTING FREQUENTLY, to give attractive glaze. A little color may be added to syrup. Serve warm with cream. Makes 8 servings.

The syrup will have to be concentrated enough to reach the hard crack stage. So less water in proportion to sugar. One way to get this is to cook it on top of the stove until almost that point (marked on candy thermometers) and then baste.

The apple dumplings here in PA Dutch land don't have the hard shell, but it sounds good. (Maybe it's an ideal that doesn't usually get reached in practice.) And they don't look at all like the Williams-Sonoma version.

Here is an old time favorite:

Joan Nash's Apple Dumplings

pie crust recipe for a double crust
4-6 cooking apples

Prepare crusts. Roll out and cut in 5" or larger squares; put 2-3 quarters of peeled, cored apples in one square of pastry. Fold up corners and pinch seams closed.

Place in a greased 9x13" pan. Make sauce and pour in pan around dumplings.

Sauce:
1 1/4 cup water
1 cup sugar or honey
1/2 stick butter
dash cinnamon

Boil together for one minute. Bake sauce and dumplings in a preheated 375 degree oven until the pastry is browned.

Baste sauce over apple dumplings while they cook? Use less butter to get a stickier sauce? Boil sauce for longer than 1 minute?

You might have to experiment to get that hard crack layer on the dumplings. But I know this TnT recipe is excellent!

Oh! Am I glad a brought back 5 bushels of apples from the mountains last week. Looks like I'll have to try all of the recipes to find out :.) Thanks so much. I agree with y'all that leaving out the butter may be the trick, however, I think too that cloudy_christine's "cook to near hard crack" stage on the stove-top may be close too. With basting any of these it sounds like extra care has to be taken to keep from spilling any on exposed body parts. Perhaps the leather gauntlets I use for basting meat on the grill might be best. Thank you all for going to the trouble of finding these recipes! I really appreciate it and my DH will swoon, for sure.

Aside to grainlady - I have 353 cookbooks at last count and that does not include the recipe cards and magazines with post it flags.

I also love the old Farm Journal Cookbooks. I have the very first one (thanks Mom) she gave it to me a few years ago. I also have the 2nd edition main cookbook that I bought way back when... it's falling apart and has it's share of furnace tape on it. I signed up for their automatic book program and have most of the smaller cookbooks too.
I learned more from using those cookbooks than any other way. Good, sound country cooking.
