Pasta Sauce Suggestions, Please

We're going to pick-up a fresh pasta order today. I've ordered a pound of ravioli in each of the following varieties:

Gorgonzola & Toasted Walnut in Spinach Pasta

Roasted Beef & Pork w/Garlic, Onion, & Thyme in Egg Pasta

Apple, Ricotta, & Porcini Mushroom in Spinach Pasta

We don't eat a lot of pasta 'cause neither of us like those heavy, cooked all day, tomato-based sauces. Ravioli works well for us 'cause I can freeze them individually on a cookie sheet & bag 7 ravs each (DH - 4, Me - 3). We DO like simple, uncooked light tomato sauces but only with summer 'maters. And, we do once in a while enjoy a cream sauce.

Since we don't eat much pasta I don't have an arsenal of sauce recipes & zero Italian cookbooks. The deli that makes the pasta has an array of sauces available but I'd rather make my own since we can't use a whole quart at a time. Since the ravs are rather complex in flavor profiles, I'm thinking something simple is probably best? Any suggestions for the pastas I've chosen?
