recipe that you posted on the Recipe Exchange in June, 2006. I had three overly ripe pears that I needed to do something with, so I did a Cooking Forum/Recipe Exchange search. I had done some baking earlier in the day and was looking for something easy to make and with simple flavors. For some reason, I wasn't in the mood for the usual cinnamon/nutmeg flavored autumn desserts.
Anyhow, my husband & I really enjoyed the crisp. I used less sugar in the pear mixture because the fruit was super ripe. I also omitted the salt in both the fruit & crisp mixtures, and I did add a couple of squeezes of lemon juice to the pears. I also baked it a little longer because I wanted it more of a toasty brown.
I used Tillamook sharp cheddar in the topping. I'd like to try it again with an extra sharp cheddar and maybe even a Gruyere. I think the crisp mixture would go well with apples too.

Cheddar Pear Crisp (danain)
4 large ripe pears; peeled and thinly sliced
1/3 cup sugar
1 tablespoon cornstarch
pinch of salt
pinch of pepper
1/2 cup grated cheddar cheese
1/2 cup all-purpose flour
1/4 cup butter
1/4 cup sugar
1/4 teaspoon salt
In a bowl, combine pears (very ripe red or canned), 1/3 cup sugar, cornstarch and pinch of salt and pepper. Pour into buttered pie plate. Combine cheese, flour, butter, 1/4 cup sugar and 1/4 teaspoon salt until crumbly; sprinkle over filling. Bake at 375° for 25 to 35 minutes or until cheese is melted and top is lightly browned. Cool 10 minutes. Serve warm
