Talk to me about lamb chops...

In restaurants, I think of them as the rack-type - frenched or lollipop style. I am sure most of you can imagine what I am thinking of.

At home from the grocery store we always get the ones that look like little t-bones with a filet on one side and a strip steak on the other.

Are these both lamb chops? We call them both lamb chops. Do they have specific names to differentiate them? Just trying to figure it out!

Yep....all rib chops...different parts of the rack and different ways of cutting....and all yummy!

Looking at the following link, it seems the ones that are served in a rack are just "lamb chops" and the ones that have the tiny T-Bone are the "loin lamb chops"..... At least that is my WAG

I'm bumping this topic because I need to bounce some ideas on buying a pressure cooker. Right now I have a T-fal that operates at a max of 12 psi and I'm looking for something that goes to 15 psi. I have the option of buying a Fissler Vitaquick for the equivalent of about 100$, but couldn't really find any info on the operating pressure (wrote them an e-mail, haven't heard back yet). Another option would be Kuhn Rikon, but from theamazon description, it also operates at about 12 psi. My husband did find another option that goes up to 15 psi - Beem. It seems a very good choice seeing that it has two pots (one 4L and one 6 L) and a basket, and it also has good reviews. But I don't know anything about this brand. What would you pick? I don't really want to go over 150 EUR, but if there's a very important reason to go over this amount, I could. Thank you! Edit: received an update from Fissler, all of their pressure cookers go to a max of 11 psi.

My post got long .. here's what I wanted to say. I believe that 30 , 3 minute videos, watched one after another . which means they would have to be downloaded together.. not picked and watched from youtube.. is the best way i've learned to understand new topics i want to learn about. With this in mind if someone can help , not by using a one at a time converter. but by a bulk , 30 video downloader for Youtube or google video, I will be glad to explain why it's the best way to learn. and I'm willing to make a nice donation, of $30 or more to a charity of the choice of the person helping with the method to bulk save about 30 or 40 videos at a time. I said i would explain why in detail if you want I'm glad to do it. And i'm willing to donate because it's a good time where people need donations and I have the money to donate. and it's something i'm asking for. Thanks for listening and reading. I spent hours trying to write something useful but it got confusing and so finally you got the gist of what I meant to say. : ) All with good intentions for me, the group, and people who could benefit by the assistance of a technical helper. I posted here because people in this thread were the type who were the type I think would benefit by the type of learning I've had success with using youtube and many downloads. But what I offer is too much to suggest . . to people with not much time. That's why I needed a helper to create the downloader routine. Yes there are some already but the ones I've used are 1 at a time and that's too slow and tedious in my experience. The only lamb I'll eat is lamb stew right around St Patrick's Day. So I'd say, potatoes and carrots could go well with it. Sure tastes good when it's all in the stew! Irish Lamb Stew Submitted By: Danny O'Flaugherty Prep Time: 20 Minutes Cook Time: 2 Hours 25 Minutes Ready In: 2 Hours 45 Minutes Servings: 10 "Juicy cubes of lamb are tossed in seasoned flour and browned in bacon fat - and that's just the start of this rich and hearty one-pot Irish feast!" Ingredients: 1 1/2 pounds thickly sliced bacon, diced 6 pounds boneless lamb shoulder, cut into 2 inch pieces 1/2 teaspoon salt 1/2 teaspoon ground black pepper 1/2 cup all-purpose flour 3 cloves garlic, minced 1 large onion, chopped 1/2 cup water 4 cups beef stock 2 teaspoons white sugar 4 cups diced carrots 2 large onions, cut into bite-size pieces 3 potatoes 1 teaspoon dried thyme 2 bay leaves 1 cup white wine Directions: 1.Place bacon in a large, deep skillet. For those who think lamb smells/tastes too strong, it's the fat that has almost all of the smell/taste. Try the lamb tenderloin, you'll find it much milder. Wonderful sear-roasted or grilled with a pomegranate molasses glaze. Because my DH grew up in HK with a half-British stepfather, the ONLY lamb he likes is strongly-flavored, gamy lamb. We get a lot of lamb out in Northern CA that is so mild you really can't tell it from beef. Both of us prefer lamb with some "ooomph." But that's also because the beef out here is pretty "meh". We have great salads but lousy steakhouses, LOL. I do an intense curry paste - don't ask me for a recipe, since I make it differently every time, depending on what I have on hand - and rub it over rack of lamb or lamb chops. Yummy! We both hate mint sauce, although I once had a good savory one from a restaurant which was a nice surprise.

We usually buy the loin chops - they used to be more expensive than the rib chops, but I think when rib chops came into the limelight as finger food at wedding cocktail hours, their price went up and now they're more expensive than the loin chops. But we still like the loin chops and enjoy the fact that they're usually $2-3 cheaper per pound in our supermarket.

Yeahbut....it's all ribs....just nearer or further from the hind quarters.
Some with the portion we call the tenderloin included, some 2 ribs and some with just half a rib. Some have more of the rib bone left on and frenched some cut the rib separatly for riblets or breast of lamb.
And you can also have shoulder chops....which are like a chuck roast in a beef animal.

In the pic at the link below you see three different lamb chops. From top to bottom you have a loin chop, a chump chop (cut from the top of the leg), and a cutlet (a trimmed loin chop).

Thick loin chops (and if they're lamb I'm a monkey's uncle - they're too dark for lamb! It's unusual to find those in Australia.)

Lamb neck chops (usually used for stews etc, but the sweetest and tenderest meat on the animal. Once sold as dog's meat, now they're a choice cut called 'noisettes'! Noisettes may also be boneless loin chops rolled up and tied, as in this pic.)
