Grainlady, I made your Sloppy Joe recipe

Better late than never, I guess. My son & his family suddenly decided to come over for dinner tonight. I had absolute no inspiration but went ahead and thawed a pound of ground beef. I had just made some hamburger buns yesterday along with some dinner rolls. I bought a couple of bell peppers this morning. So I started thinking of Sloppy Joes, but needed a recipe. A search led me to your post in September of 2007. I had all the necessary ingredients, and it looked pretty easy. (Along with no inspiration, I also had no energy.)

I used unsalted tomato sauce and salt-free ketchup. I added a thin slice of low sodium provolone to each sandwich. Put together with my homemade low sodium buns, it made a very tasty meal.

SLOPPY JOES

(Extension Service, Kansas State University, Manhattan, - July 1963)

(10-12 servings)

1/2 c. chopped onion

1/4 c. chopped green pepper (if desired)

1/4 c. chopped celery

1 T. fat (if using very lean meat)

1 pound ground beef

1 small can tomato sauce

1/4 c. catsup

1 T. vinegar

1 T. sugar

1-1/2 t. salt (or to taste)

1/8 t. pepper

1. Brown ground beef and vegetables together. Drain any juice/fat.

2. Add remaining ingredients. Put lid on frying pan. Simmer the mixture for 20 minutes over low heat.
