Help! Where are gel stain experts?

I have a table that I think is walnut veneer and a a solid oak frame around it. I probably should have never started sanding it, but anyways I did sand the top. Now I have three different colors: Table top, oak frame, and the extension leaf, which I haven't sanded but just stripped off the lacquer. This is what it looks like now:

My goal is to have a dark, rustic looking table, ideally more or less matching the legs; these I just stripped:

Would GF walnut stain do the job?

Will the difference between the oak and walnut color be very noticeable?

Should I sand the extension leaves, or is there a chance that I can sort of match the stain?

Do I finish with GF varnish, or wax,or what?
