Beef Cheeks

I am an adventurous cook. So,when I find something in the store that I haven't tried, I buy it, and then figure out what to do with it.

Well, I bought a couple of packages of beef cheeks a while back. I braised one package, with onions, red wine, herbs & beef stock. It turned out o.k., but the meat had an odd texture...almost too tender, if that makes sense.

So, I still have the other package, and I'm not wild about making the braised beef cheeks thing again.

Does anyone have a really good recipe for them? Or if not, since I grind my own beef for burgers & spag sauce etc, would that be a good way to go, maybe disguising the texture a bit?
