what to do about plumbing in kitchen remodel

I've asked this in another forum but thought I'd ask here since this is about an old house.

We are doing a kitchen remodel. Someone advised us that in a remodel we should change out the pipes since they are original to the house. Also the best time to do so is when the walls are open. The contractor we are using is changing the pipes from the sink to the wall. Is that what he is supposed to do or are there other pipes in the wall that should be changed out. Of note our house is old - built in 1932.
