Bacon ends, want some good ideas

When I went to my market today, one of my woman friends called to me,

from behind the meat cases.

She was slicing slabs of smoked bacon

Said she had some ends for me but I had to sing a verse of ,

" I have but one heart " in Italian.

I did , they threw me out of the Market ( only Kidding )

Everyone was cheering when I left for the PO.

When I came back, she had a large bag of Bacon ends. ( about 10 Lbs. )

I didnÂt know I sounded that good !!!

I sliced all the good pieces for Bacon and the end pieces for Lentil Soup, Scalloped Potatoes. etc.

Lots of fat pieces for the birds, this winter.

Bacon bits! Bacon bits! The REAL kind!!!!

Mince and cook some up, slowly and very crisp. Save the fat for cooking with and the crispy bits for sprinkling on salads, veggies, potatoes or reheated rice. It keeps a long time in the fridge, longer in the freezer. Great on salads too, or sprinkled in cheese or tuna sandwiches.

Wanna be really, really bad? Grind some of those bacon bits fine in a spice grinder and use them instead of salt on popcorn. Or add some to whatever sort of crispy coating you use for baked/fried, breaded meats.

Of course, you know plenty of ways I'm sure, to use it in pasta...

Bacon. :) Sigh. :)

Boy did you luck out!! Good for you. I buy about 5 lbs to freeze and have on hand for Bourbon Baked Beans, German Potato Salad, and omelets .

I'm pretty sure there is more to it than what has been said. It's almost impossible to put it all in one post. What I interpret is that he doesn't have a problem with your daughter's kids, but that if you had custody of them, he'd have to deal with your daughter, which he has washed his hands of. You seem to agree that he has cause to feel that way so at least you are on the same page there. If she's that bad that her own mother has had enough, then I feel really sorry for those kids. Yes, they will always be tied to their mother, even if you have custody. and so you have to choose between your grandkids and your husband of 17 years. OUCH! Perhaps you could seek legal advice on getting guardianship of the kids and a restraining order on her? I don't know how bad she is or if you just don't agree with her choices. But, if it's hurting your grandkids, you have to put them first. They are kids and need someone in their corner. If it has to be you, then it has to be you. If he can't deal with it, then it's unfortunate. It sounds like a real mess if there are accusations from your daughter (of what?) that your husband doesn't want to deal with. I feel like there's a lot more to it than what you've said. If he just stuck around to help raise your kids, then they are raised and now he is going to leave because you 'might' get your grandkids. It's really a no win situation.

Creative Homeowner puts out two wonderful books on this subject: " Decorating with Architectural TRIMWORK planning, designing and installing" I got mine at Home Depot. Lots and lots of great pics, too. The other has Architecture in the title, and very like the other. Both great resources for all moulding, etc. They are my trimwork bibles.

I just avoid the news if I need to. I usually watch our local news updates (airs during the Today Show) and the national news updates are shown on the Today Show, but mostly pay little attention. We are in similar shoes as my father moved to an Assisted Living facility this week. It's been a hard week, mostly emotionally. I know it is best for him and his attitude is great, but it's just hard to see someone leave their home of 56 years. Wide open with a bit of acreage and privacy. He has a nice big room/bathroom (private) and thankfully we were able to get him on the backside of the villa, which overlooks woods. There's a large screened porch also. He's very used to peace and quiet (especially at night) and was worried about that. Thankful for the amazing caregivers he will have. We used this facility with my grandmother and they previously only had memory care. Now they have opened two villas for assisted living. My dad's mind is great but at 90 (in two weeks) his body is wearing out. Looking forward to a better week - it already is as the sun is shining and spring is in the air! Tina (tinam61)

But serious, I would bake them crispy and make bacon powder in a blender.

Here is a link to a Guy Fieri's pasta with bacon and tomatoes. Other versions go by the name "all'Amatriciana".

I usually increase the garlic.

Wow! What a find. Be sure to freeze some for use in corn and clam chowders.

Pasta carbonara.
Pea soup with bacon. The kind with green peas and little tiny pasta. Or the green goop kind.

My first thought was REAl bacon bit, too... have done that before when ends are available, but never TEN lbs worth!!

You could also chop, compress, and freeze for the furute. WOuldn't make white or red clam chowder without bacon. Having small pieces ready to render is a great thing. My version of home fries is... bacon, potatoes, onions, carrots... all cooked to REALLY brown in a big old cast iron skillet.

Thinking this is a little silly... BUT... you're NOT tossing the liquid gold, are ya!?!

What a great piggy treat!

Thread some hunks on skewers with whole mushrooms and/or little cooked potatoes (can use the canned ones), brush with BBQ sauce and grill.

Put a piece in to stew with a pot of chopped kale or collard greens. Dice some for corn chowder.

I'd probably grind some to mix in with ground venison later in the year.

Oooh, yum! Do you have to precook the hunks? If not, the 'shrooms don't get overcooked?

That made me think of another fav around this house. Thin slices of bacon, fried slowly to just before the point of beginning to stiffen. Wrap these around large prawns or scallops and thread on a skewer. Grill these until the bacon crisps a bit, and then top with a Dijon mustard & mushroom cream sauce and serve on a bed of rice for dinner. They're also great with a tangy/sweet/spicy dip of some sort.

Oooh, again! Idea! How about doing the above, but with good sized button 'shrooms or thick slices of portobello...ahhhh, portobello, grilled in bacon, Dijon mustard cream sauce on a bed of home made egg noodles. Sigh. :)

Lou's got smoked bacon without the watery solution added to grocery store bacon so it wouldn't be necessary to precook it.

Can you make pork stock w/ some of it, or is it too smoky? Can never have too much stock in the freezer. The bacon bits sound worthwhile too. Lucky dog. I wish I had friends like that.

Lots of real good ideas here.
I found years ago that my kids would eat almost any vegetable if I found a way to cook it with bacon.
Fried okra,
Roasted Brussels Sprouts,
Green beans
Sauteed cabbage.
Any and all kinds of dried beans & peas.
(Split pea soup especially)
It's also a necessity (in our house) in Potato Salad.
And some similar salads featuring peas and/or green beans.
Red beans and rice.
Sauteed summer squash with bacon, onions and tomaotes.

And yes, it freezes well.
So you can stretch your bounty over a long period of time.

Lucky guy!

As a student of Southern cooking, which I discovered at a late age to be delicious, I've learned there are many uses for a small piece of pork fat. As others such as Rusty have mentioned, ooking it with greens or beans is fundamental.

Not that pork fat is absent from Yankee cooking, of course. They have their baked beans and chowder flavored with a bit of pork.

I would freeze a lot of appropriately sized pieces for those uses. But you already knew to do that didn't you, Lou?

Hi everyone, thanks for all the ideas.
I'll tune in again, been running a lot.

Just got back from the Va Hospitial , for another visit, to different doctors.

Jim everything is cut up and in the freezer.
I might get some more next week.

Maybe I'll sing " Danny Boy " this time.
