Easy cake mix recipe!

It is getting close to harvest and I am always looking for dessert recipes that I can make and freeze to have on hand when I don't have time to make a dessert that day. I don't know where I got this recipe so if it is from someone on this or the cooking forum, I apologize.

Blueberry Pound Cake

1 butter recipe cake mix

1 (8oz.) pkg. cream cheese

3 eggs

1 stick butter, melted

3 T. sugar

2 c. blueberries

Preheat oven to 350. Cream the cream cheese, add eggs, beat well. Add melted butter and sugar. Add cake mix and mix until well blended. Fold in the blueberries. Grease and flour a tube or bundt pan and bake 45 to 50 minutes or until toothpick inserted in top comes out clean.

Tip-toss blueberries in a bit of dry cake mixing before adding and they won't sink to the bottom.

Here is another one that is super easy and very good. My office loves me to bring this one for a "snack" day. I bake this in a bundt pan and it freezes nicely.

Apricot Nectar Cake

* 1 box lemon cake mix

* 1 cup oil

* 3/4 cup apricot nectar

* 4 eggs

Glaze Ingredients:

* 1/2 box powdered sugar, sifted.

* juice of 1 lemon (3 to 4 tbsp).

Cake Directions:

Mix cake mix, oil, nectar, and eggs.

Beat until well blended.

Pour into oiled 13x9x2 inch baking dish.

Bake at 300Â° for 45 minutes to 1 hour until done.

Remove from oven and place on cooling rack.

Glaze Directions:

Mix all ingredients for glaze until sugar dissolves and pour over warm cake.

Let glaze soak into cake while cooling.

Cut into squares for serving.

I tried this recipe yesterday using a can of lemon pie filling. First I tried to make cupcakes, but the cake stuck to the paper liners. So I went ahead and put the remainder in a cake pan. The cake rose beautifully and browned nicely around the edges but the center remained flat. The center never rose, and when it was done, I removed it from the oven and the exterior part that had risen collapsed fairly quickly. I was taking this to a party and was prepared to take it as is, but it was not even particularly good tasting. And it was chewy/sticky. While the batter tasted great, the consistency of mousse and lots of lemon flavor, the cake was "eh." I tossed it in the garbage. Afterwards, it occurred to me there is a reason angel food cake is cooked in a pan with a hole in the middle. But I suspect that even with a different pan, the heavy lemon filling would weigh down the angel food cake batter.

A little Bundt Pan history... The cast-iron kugelhupf pan is common in Europe and in 1950, a group of Minneapolis women asked Nordic Products owner H. David Dalquist to make an aluminum version of the pan. Ten years later, the new Good Housekeeping Cookbook showed a pound cake baked in one, and suddenly every woman wanted a Bundt Pan. We used to call it Dump Cake because you just "dumped" everything in. I hope this is it. Dump Cake Ingredients 1 (21 ounce) can cherry pie filling 1 (15 ounce) can crushed pineapple 1 (18.25 ounce) package yellow cake mix 8 ounces chopped walnuts 1/2 cup butter Directions In a 9x13 inch pan mix cherries and pineapple. Sprinkle dry cake mix over pineapple, and cherry mixture stir until just combined. Then sprinkle walnuts over top. Drizzle top with melted butter or margarine. Bake in a 350 degree F (175 degree C) oven for 35 or 40 minutes or until golden brown.

Most bakeries use "boxed" cake mixes that come in large tubs or sacks. Basic layer cake mix is formulated to be an "oil cake". That's why the label says vegetable oil, not butter or shortening on it. If you substitute butter you will get a denser, dryer cake. Because today's butter has varying degrees of water in it the cakes will not be consistent in texture. Fats also provide for the aeration of leavening in the batter. That results in the final "crumb" of the cake. So the type of fat used matters. Denser fat like butter doesn't bind as well with flour. That is why pie crust is flaky. You don't want cake to have the same result. That's why oil is recommended in cake mix. I make pound cakes, sponge, fruit, ethnic (like Karadopita) and most bundt cakes from scratch. However nothing beats a regular boxed cake for a standard iced layer cake or for decorating. Not all boxed cakes are created equal either. I used to use Betty Crocker but Duncan Hines has my favorite for years along with being the favorite of those who eat my cakes. Something else to know. Avoid refrigerating an un-iced cake. It will dry them out. However I always try to freeze un-iced layers for a day or so up to a couple of months. It makes them even moister. Bakeries that provide wedding cakes do it that way.

The tip was written in the recipe that I copied to my "to try" file. Sorry if I offended you or anyone else. I know everyone knows that tip.
I thought their might be someone else besides me that sometimes had to rely on an easy dessert.

Teresa, I guess we were typing at the same time. Thank you for your recipe. I will make it tomorro and freeze for harvest. I make most everything from scratch, but I don't mind using a cake mix. If you have any other easy recipes I would appreciate them.
I made two buttermilk pecan pies today and have them in the freezer and I will make apricot and cherry fried pies. I make them up and freeze, but don't fry. I used to fry them and then freeze them but they are so much better freezing and then frying as needed.
I cook alot of meals and anything that I can do easier and just as healthy I am going to do.

Here are a couple more easy desserts:

Apple Chess Pie

1 unbaked pie shell (reg. not deep dish)
3-5 apples, peel and core
1 cup sugar
1/2 t. cinnamon
1 egg
1/2 to 1 stick melted butter or margarine

Grate apples into unbaked pie shell. Mix rest of ingredients and pour over the apples.

Bake at 450 for 10 min. then lower heat to 350 and bake for 35 minutes more.

Double Chocolate Snack Cake

1 2/3 c. flour
1 cup packed light brown sugar
1/4 c. cocoa
1 t. baking soda
1/4 t. salt
1 cup water
1/3 cup oil
1 t. vinegar
3/4 t. vanilla
1/2 cup chocolate chips

Heat oven to 350. Grease and flour a 9x13" pan. Combine dry ingredients in a bowl. Add wet ingredients. Beat smooth. Pour into prepared pan. Sprinkle chips on top.

Bake about 30 minutes. Test with a toothpick in center. Cool pan on a rack. Cut into squares.

Trixie, I made that cake for one of the girls' birthdays last week (since we'd just picked 3 gallons of blueberries). I'd torn it out of a little magazine that comes with our local paper. It was very easy and very good....especially with a little white chocolate glaze drizzled over top. I love easy bundt cakes for staff bdays...they take home the leftovers and bundts travel so well.

Next month I have two with birthdays. This apple cake will be one of the cakes, and I'm thinking that apricot cake might be nice for the second one (I don't see why it wouldn't bake just fine in a bundt pan, yes?).

Spicy Apple Nut Bundt Cake

1 spice cake mix
1 can apple pie filling
2/3 cup sour cream
2 eggs
4 tablespoons butter
1/3 cup brown sugar
2/3 cup chopped pecans

Oil Bundt cake pan. Melt butter and stir in brown sugar and nuts. Pour into pan.

Mix cake mix, pie filling, sour cream and eggs until well-blended. Pour over nut mixture. Bake at 350F for one hour. Let cool in pan for five minutes, then turn onto cooling rack. Nice with a brown sugar glaze.

Two thumbs up from my sales crew on the blueberry cake recipe Trixie. I made it last night and took into the office today. It was suppose to be dessert for lunch but they had it for breakfast. I took a pic last night after sneaking a slice for a late treat. I'll post it on the WFDessert thread after I find the darn usb cord for my camera. I did follow Katie's lead with the white chocolate glaze/icing after finding a half package in the freezer.

The spiced apple and the apricot sound good too. Another who has cake mixes and brownie mixes in the pantry. Love homemade but there are times when a mix is handy. Some of the kids in my group prefer the brownie mix...LOL! Plus it's fun to let the little ones do their thing with a mix. I'll go ahead and add that I like the Jiffy Cornbread mix too for a quick fix...LOL!
