Thanks Shelley. It has been a really tough week and it is only Tuesday.

Since I don't have to be back at the hospital until 6:00 in the morning, I will put the pulp in the fridge for tonight. I can throw it in the freezer in the morning.

First, a hug to you and best wishes for all in need. Since you can freeze whole tomatoes, I see no reason you cannot freeze the pulp for processing later.

Hang in there, I am sure a "dry spell" is coming.

I have 2, five gallon buckets to do tomorrow..
I will blanch them and toss them into a pot, with some onions, garlic, celery and a little salt and pepper....cook for a but, as longa s I have patience for and put into freezer containers.
You can just blanch, skin and freeze....

Yes, you can certainly freeze tomatoes for use later, whether you peel them or not, cut them or not, blanch them or not.

I'm told that the toamto skins slip right off if you just toss them into the freezer whole, but I've never frozen them that way.

so certainly, you can freeze pulp and process it into sauce later. You may have to cook it a bit longer to get the desired thickness.

Do what my Mother does.

Remove the stem end, cut them into thick slices, portion them out into bags or containers, and freeze that way.

Then, when you're ready, you can make sauce or stewed or whatever you want.

As others have said you can easily freeze the tomatoes and then use for sauce, soup whatever. However, to answer your question, I don't think I'd can them after they have been frozen. I'd be worried about a change in their acidic levels etc.

Perhaps I'm wrong, this is just a "gut" feel on my part but I would not can previously frozen tomatoes.

Freeze whole tomatoes that have been washed and cored. Put the tomatoes on a cookie sheet, place in freezer, and when the tomatoes are solidly frozen, put in freezer bags. To use, thaw (or run briefly under tepid water), slip the skins, and use. I do this, and use the thawed, skinned tomatoes roughly chopped in marinara sauce, among other things.

Thanks for the advice. I got home from the hospital about 9:00 this evening and found that a tomato fairy had been here. I have wonderful sauce cooling in the kitchen. My neighbor came over sometime today and canned it all. I am truly blessed with friends and neighbors.

Both my husband and brother have there surgeries in the morning. DH's should only take a couple of hours and DB's will probably take about 4 -5 hours since they are doing 5 bypasses on him. Thank goodness they are in the same hospital. The pups are staying with good friends of ours since I won't be back home for a few days. My sister and other brother will both be here with my SIL and I, so we have a great support system in our family.

It's great to have neighbors like that. Not as dramatic as your episode but--I have a high pitched roof and I sailed Beau's new helicopter onto the roof. My neighbor saw it when she came home from work. She came over with her extension ladder while I was gone and retrieved the helicopter!
