i am looking for corn dumplings recipe.never heard of it but he said his granny used to make them like dumpling but used cornmeal instead.

Here is a recipe from the Better Homes and Gardens Heritage Cookbook for Short Ribs with Cornmeal Dumplings. You do have to have some sort of stew to cook the dumplings in.

3 lb. beef short ribs, cut in serving-size pieces
salt and pepper
1 med. onion, cut in thin wedges
1 clove garlic, minced
1 28-oz. can tomatoes cut up
1 12 oz. can beer
1 fresh or dried hot red chile pepper, seeded, chopped
2 TB soy sauce
1 TB sugar
3/4 t. salt
1/4 t. pepper
1/4 t. ground nutmeg

Trim fat from ribs. In heavy pot or Dutch oven brown ribs on all sides; season with s&p. Remove ribs from pot. Drain off fat, reserving about 2 TB. Add onion and garlic to reserved drippings; cook until onion is tender. Add tomatoes, beer, chile, soy sauce, sugar, the 3/4 t. salt, the 1/4 t. pepper, and the nutmeg. Return meat to pan and bring all to a boil. Reduce heat, simmer, covered, until meat is tender, 1 1/2 to 2 hours. Cool, skim off fat, return to heat, bring up to boiling. Meanwhile, prepare the dumplings:

In saucepan, combine 1 cup water, 1/2 cup yellow cornmeal, and 1/2 t. salt, bring to boil. Cook and stir until thickened. Remove from heat. Stir a small amount of the hot mixture into 1 beaten egg. Return to the hot cornmeal mixture. Stir together 1/2 cup all-purpose flour, 1 t. baking powder, and a dash pepper. Add to cornmeal mixture; beat well. Stir in one small 7-8oz. can whole kernel corn, drained.

Drop batter by rounded TB full onto boiling stew mixture. Cover and simmer until dumplings are done, 10-12 minutes. Serve hot. Makes 6-8 servings.

And from a small booklet from the NC Miller's Association, no date:

Beef and Corn Meal Dumplings
1 1/2 cups water
1 can roast beef (stew beef or chicken may be used)
2 small onions
1 TB butter
salt to taste
pinch of black pepper

Boil all together until well blended. Make dumplings:

1 cup corn meal
3/4 t. salt
1 cup hot water
Mix and drop small balls about the size of a quarter into the boiling meat mixture singly. Cook, covered about 10 minutes.

Note: These dumplings are also used in liquor of green vegetables. (perhaps referring to greens here)

Thanks Annie. I am sooo paranoid though and get nervous that I could "hurt" someone with something out of code, esp. since we won't have the cake til tomorrow and nothing is being cooked. The light cream worked out perfect and I am so happy that I turned to you all for guidance as I would have just used my Betty Crocker tub (and I didn't want to use it for this special cake). My mother makes this. I don't eat deer but my parents both say it's very good. My dad was a hunter and fisherman all his life - those were his hobbies. Savory Venison Stew 1 lb deer stew meat, cut into 1-inch cubes 4 slices bacon, chopped Â¼ cup flour seasoned with salt and pepper 1 garlic clove, finely chopped 2 cups water 1 beef bouillon cube Â¾ cup tomato juice Â¼ cup Port or dry red wine 1 tsp lemon juice 1 tsp steak sauce (optional) Â½ tsp marjoram 4 small onions 4 carrots, cut into chunks 4 potatoes, quartered 1 cup chopped celery Salt and pepper Fry bacon in a Dutch oven. Add cubed meat that has been tossed in seasoned flour; brown on all sides. Add garlic, water, bouillon cube, tomato juice, wine, lemon juice, steak sauce, and marjoram. Cover and bring to a boil. Reduce heat and simmer for 1Â½ to 2 hours, until meat starts to tenderize. Add more water if necessary. Add onions, carrots, potatoes, and celery. Cover and simmer for another hour, until vegetables are tender. Add salt and pepper to taste. Thicken stew slightly by sprinkling flour over the top and stirring while cooking. Serves 4.

Hi. There was no crust on it. When they brought it, they brought out a large plate with the small brie on it. There was a sauce and the caramelized onions on it. The sauce tasted more to wine than any sweet jam. No, it wasn't really sweet. Can you eat the rind? This wheel of brie was just about 1-2" across. Given your basic question, the answer is a pound of leeks, from which you use the white parts. However, much of the green is also usable. You just want to make sure its the tender, inner parts. After cutting off the whites, peel off the tough outer leaves and you'll find a lot of great-tasting, tender green parts. And I'll side with San on this. There is no need to get anal about amounts. This is cookery, after all, not rocket science. And the fact is, the amount of white on a leek can vary considerably, depending on how it was grown; so the white parts from a pound of leeks is a lot of things, but a precise measurement ain't one of them. Although its taken as a truism that baking is more precise than cooking, I think we go a little overboard on that. The fact is, the amount of liquid-to-flour is subject to a lot of variables, which makes baking just as much an art as a science, IMO.
