I wanted to post that the trade does not have to be done in the largest flat rate box that ships for 12.95. It can be any box that is equal in size or larger as we all know flat rate is usually not the way to go. I sent a box of plants to someone yesterday that was literally 3 times the size of the largest flat rate box and it shipped for the exact same amount priority! I was shocked!!! She just wants to make sure the trades are equal ( meaning she will send at least as much that will fit in that particular box) and sent priority mail. Sorry for any confusion. God bless!

The size makes no difference. It is the pH of the fruit that poses the safety issues. pH rises as the fruit begins to ripen. So if the recipe you use has a sufficient safe level of acid (vinegar or such) then you can mix them up any way you wish. If the recipe has a low level of acid such as vinegar diluted with added water or if it has other low-acid ingredients then you'd need to use only the fully green ones, the ones showing no color. Or as Bejay said just let the ones with color just finish ripening and use them anyway you'd use other ripe tomatoes. The fully green tomatoes are acidic but the pH of the tomatoes changes as it ripens so once it begins to blush (show any color other than green) it becomes a low-acid fruit and needs added acid accordingly. Carmichaels is just now getting some of their little seedlings transplanted into the 3-packs, so the sizes vary a lot and some are not ready to sell yet. Some, however, are almost too big already. Those will have to be repotted before hitting the garden. They have literally a few hundred to well over a thousand plants of each variety, and they must have over 50 peppers and tomato varieties alone, not to mention all of the other seedlings they sell that I don't look twice at. I have talked to the owner a few times and he always grows a few new ones that are just out on the market each year. That is how I found my Crista tomatoes last year, but which he didn't plant this year. I don't care for the quality of a few things they sell, but they have a great selection of seedlings! If you can't tell, I'm eager to get back there to see the final varieties that they will have once they get them all into the trays. How does all of this enthusiasm seem to disappear between now and the end of July each year? Thank goodness for seasons.
