Peppers and cucumbers are both very susceptible to softening and it happens fast. Unfortunately, a lot of produce is time-sensitive and when canning it's often "go without sleep but get it done" or forget it. Inferior products yield inferior results. I go with Dave's relish idea or do a piperade variation for the freezer. The link below is the recipe I use. It calls for bell peppers but a mild hot pepper should work well. the reason I grow peppers is to let them go until they are red ripe. love that red ripe flavor. by the way they should be hotter when red ripe also. and dont pick them as soon as they look a little ripe. keep giving them more time. of course if you want to eat one today just pick it. but dont pick them to let them sit around doing nothing. better left on the plant then laying on a kitchen counter.
