My garden is still producing when this time of year we are often putting it to bed...tending the mower 'hogs' for winter storage, taking fall hikes with the pups...planning and taking notes for next year, etc.
I have a 10yr LeeValley garden diary book, (highly recommended), that has a frost noted a few years ago on August 19th!
So instead we embraced the long season and harvested another load this past weekend. Have three vats of fruit vinegar fermenting...grapes, pear and apple.
I pulled out some loaves of bread from the freezer to make room, (toasting for breadcrumbs).
For all the veg and tomatoes i am making bisque five ways...
Roasted Fall Harvest Bisque
1/2 hour prep, two hours later, 1/2 hour time for preparing for the freezer
Three 1/2 sheet pans fitted with parchment (or any flat roaster, cookie sheets, etc)
4 cups stock, chicken or vegetable
mixed fresh herbs... basil, dill, chives, tarragon, parsley leaves, etc.
fresh corn cut off the cob if you have some.
-sheet pan one
8-12 tomatoes, tennis-ball size cut into quarters removing core, golf-ball size cut in half
place on sheet pan skin side down with a quartered onion and 2 garlic heads with the tops sliced off
exposing the cloves. Fill the tray. Less is fine. Fill it full if you have an abundance of toms. Drizzle or spritz of olive oil
pop in oven and turn on to 350. (no need to pre-heat) set timer for 1 and 1/2 hours

carrots, one inch slices, a potato cubed, a sweet potato cubed a bit larger, a few beets if you have
them, cubed like the potato, slices of acorn squash, baby pumpkins and any firm fleshed crops...spritz with olive oil and into the oven with the tomatoes
-sheet pan 3
soft vegetables like cubed zucchini, cukes, string beans, sliced one inch, peas, celery, baby leeks, slices of sweet pepper, and whole small hot peppers, an apple or two, or a pear...
No need to shop. Just what is in your harvest. Softer veggies with similar cooking times, spritz or drizzle with olive oil and Into the oven
The tomatoes are already roasting. After a 1/2 hour switch the trays around.
Tomatoes will shrink to half size while slow roasting, concentrating sweet flavors after an hour
Tray two is done when potatoes and squash are soft pierced with a fork and slightly roasted
Tray three is obvious, just soft, not mushy
Take trays out in when done to rest. (my soft veggies just needed 1/2 hour)
I have a vintage 1 qrt cuisinart but perfect for this...
Take about two cups of the tomatoes with some onion, squeeze out a few roasted garlic bulbs, a couple potato cubes, a bit of carrot, maybe a bit of leek, and some fresh herbs.
Puree in cuisinart or blender with 1/2 a cup of stock
-you have a roasted tomato garlic soup or bisque
freeze in a qrt zip-lock, pushing out all air, seal and lay flat in your freezer (label it)
Don't wash out the cuisinart! (good stuff left behind)
Add another cup of tomatoes with squash and sweet potatoes and some other veggies of choice and you have another bisque adding another 1/2 cup of stock and herbs.
#3- maybe just a 1/2 cup tomato with lots of veggies and a few hot peppers for a spicy veggie soup.
#4- tomato, garlic, some veg, corn and basil for a chowder...and a bit of stock...
You get the idea. Label and freeze. Easy thaw in the winter months adding a bit of yogurt or cream...
A few meatballs, a small salmon steak, shrimp, or on its own with toasted rustic bread and a bit of parmesan...
