Recipe help for elusive stewed beef?

Since I bought a pressure cooker a few years ago I have been trying to find a "stewed beef" recipe that my mom made for years in her PC. Now, this is NOT beef stew - no potatoes, no carrots, no peas, maybe not even onions, but I think I want onions in mine.

Yes - I did ask her how she made it, but she can't remember as that is 50 years ago or more. I know it was cubes of beef, as in "stew beef" and there was a good, dark, flavorful gravy that we usually had over rice, I think. And I think she must have thickened the gravy, probably with a slurry of water and flour. Now, as to how she got that gravy is a puzzle.

Do any of you have an idea how to bring out the flavor of the beef in this "stewed beef" and perhaps how long to cook it in the PC to get it falling apart tender? Does anyone have an old, old cookbook that contains a recipe for "stewed beef" that I can experiment with in the PC?

Any help is appreciated 'cause I can't even find recipes for "stewed beef" on the 'net!
