How is everyone doing with their plans and recipes for the Burger Cook-Off this weekend?

I've already received Sharon/Chase's burger picture and it looks fantastic.

Well, I just got back from my Burger Cook-off shopping and my cart was full of good stuff; several kinds of lettuce, tomatoes, ground chuck and ground sirloin, hamburger buns, a cucumber, several varieties of cheese and some misc. items.

Not quite sure what I'm making yet but I am starting to write down ideas.

My burger isn't going to happen. I'm sorry. We still are under the influence of the "flu bug". It was going to be a take off on the meat filling that my Japanese friend uses to stuff her rice balls with, and instead of a bun I was going to use a thin flour tortilla spread with a bit of hoisin sauce (think Peking Duck) and a peanuty Asian slaw on the side.

We'll be lucky if we get the stuffed peppers and mashed potatoes to stay down LOL!

Warning to Lisa--do not read! I am going to try this now that I have become the grill master at my house. Bacon Burger Dogs Ingredients: 1 pound of hamburger 1 pound of thin sliced bacon 8 hot dogs (the real deal, no cheap ones!) 4 slices of cheese (split the slices of cheese in half) 1 egg 16 toothpicks Tin Foil Wrap Combined hamburger, egg and your spices/seasonings to taste and form 8 hamburger patties. Spread out your bacon with every two slices being about 2 " apart. Slice each hot dog from end to end, NOT completely through, maybe half through the thickness of the dog and insert one half slice of the cheese into each dog. Place the dog on one end of the hamburger patty and carefully roll the dog while wrapping it with the patty. Place this carefully at the ends of your bacon, which should be spaced 2 " apart....(2 slices of bacon per burger-dog), carefully roll and wrap the bacon. Secure bacon to each burger-dog with two toothpicks. NOTE: Leave each toothpick exposed on one side or the other in order to remove them after cooking. Wrap your burger-dogs with tin foil and place on grill over medium heat, but do not place directly over flame. Cook for half-hour and then CAREFULLY remove foil from burger-dogs (HOT JUICE-Be Careful!) Place burger dogs back onto grill for browning. Serve with any condiments by itself or on a large Hoagie Roll

I very seldom eat burgers - maybe once or twice a year, if I think about it. My favorite toppings include bacon, sautéed mushrooms, sautéed onion, avocado, bleu cheese, provolone cheese. I don't have all of these at the same time and no more than three of them. Worst topping is fried egg - that would make me gag. I also do not want anything sweet, such as BBQ sauce, sweet pickles (or anything made with sweet pickles), or fruit (such as pineapple, mango etc). I also like mustard (never ketchup) and lettuce, but I don't add tomato with mushrooms. If I use mayo, it has to be combined with hot sauce I always keep a container of mayo with Habanero sauce in the fridge for use on sandwiches that have lettuce. A plain burger would have lettuce, tomato, dill pickles, and mustard, but I almost never have that. Another combination I like is tomato, basil, and mozzarella cheese with pesto as the only condiment - no mustard and no mayo.

Only a burger of good quality chopped meat and it is of a substantial thickness is really good on the grill. Most of what people throw on the grill at a get together are those pre made little thin patties of dubious content, in my opinion. I find that the meat cooks very nicely in a hot iron skillet, and they dont have to be those thick moist patties I am guessing that a smashburger must be a patty that gets smashed down on the cooking surface? That adds more surface area and exposes more of the meat to get that nice browned flavor. So a thin burger smashed out on a skillet, or a thick one full of juices cooked like a steak on the grill..........they both have thier place but are not the same. My preference is for the one cooked right on the hot iron skillet. Actually, what I do mostly now is that I make loose meat burgers. And it is often with a good ground turkey . The ground turkey requires the addition of some oil and I use olive oil. I cook the ground turkey in the hot oil in the skillet and let is just break into rather largish bits, not a bunch of crumb like bits. They brown off nicely in the skillet and have a lot of that great flavor. Then just treat is as any favortite burger. I have come to prefer this and it is one of my go to meals because I can take frozen ground meat from the freezer and put it in the skillet while still frozen .It thaws and cooks up nicely in teh skillet. We gave our nice and expensive grill to our daughters family . It was way too big for just us two and they use it all the time and have lots of get togethers.

I did pull out 2.25 lbs of ground beef out of the freezer this morning though..so I'm part way there...

Terri, yep defrosting the beef is a beginning!

But I'm pretty sure we're having Onion Rings as a side and I did buy a huge sweet onion today. We've not had them in years and I have a craving.

What a bummer, Seagrass. I sure hope you get to feeling better.

Well, I experimented last weekend with making my own veggie burger out of black beans, tomatoes, tofu, some cumin and cilantro, and an egg to hold it together, but not surprisingly it didn't work out. The mixture turned out way too wet to form into burgers. They were more like sloppy joes. The flavor was good, but the mouth feel, uh-uh. Anyway, I'm going to follow a recipe this weekend, and hopefully come up with something much better.

If I come up with something photographic enough to post pictures, I'll need to email them to someone, cause I don't know how to put them in a post yet. I don't know if I'll have time before then to learn how to do it.

Hmmm my burger...well I just shaped the honey wheat rolls...
And I'm going to pull out the beef in a few minutes and season..I think I'll "fill" mine with feta and roasted red peppers? Dunno..and hubbies with bacon and cheese...again dunno...whatever strikes my fancy when I start putting them together...
kids will be just plain seasoned patties....

Hope you're feeling better, Seagrass.

Larry is out shopping for me now, I'm not feeling so great this morning, bad cold. Glad I didn't invite anyone over for burgers! But I did find another recipe that I'm combining with Debbie's mexican burgers, it's from Steve Raichlen, so I'm calling mine a Raichlendebbie burger!

I'll post to the burgers on parade thread later tonight!

I just made my bread for tonight's burgers and my house smells wonderful. It is taking every bit of strength I have not to tear off a hunk and eat!!

Is there anything that smells better then homemade bread?
