Can you can Sweet Potato Butter?

Hmm...just did a search..and all the recipes I clicked on were cook, jar and refrigerate.

I did find one that was Spotato and apple..but still refrige...

Can it be BWB?

Jude, I'd just use a pumpkin butter recipe, but the stuff would have to be refrigerated and used or frozen, it's too dense to can safely. I LOVE pumpkin butter, so I'm sure I'd love sweet potato butter too. At any rate, here's a recipe, as I said, I'd just sub sweet potato for the pumpkin, probably 3 1/2 cups mashed. Butternut squash might work too and now that I'm thinking, brown sugar might be a good addition. Or maple syrup, yum, in place of some of the apple juice. Use a deep pan, it'll get thick and you'll get ittle "volcanoes" spattering up on your arms. Or use a pan in the oven at 350, stir periodically until thick enough and you won't have to deal with that. I've used this recipe simply because it does have common ingredients and not so many flavors that it gets confusing, if you know what I mean. I think the citric acid is either to keep the pumpkin from darkening or as a preservative, or maybe both. Commercial canneries have equipment not available to the home canner, so they can process things that are not safe to do at home. Pumpkin Butter 1 (29 ounce) can canned pumpkin puree 3/4 cup apple juice 2 teaspoons ground ginger 1/2 teaspoon ground cloves 1 1/2 cups white sugar 2 teaspoons ground cinnamon 1 teaspoon ground nutmeg Combine pumpkin, apple juice, spices, and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 minutes or until thickened. Stir frequently. Transfer to sterile containers and chill in the refrigerator until serving. Annie

These country-style sweet potato muffins have the comforting tastes of a pumpkin pie with a hearty yet delicate, moist texture. Serves: 12 1 1/4 cups old-fashioned rolled oats, divided 1 1/4 cups all-purpose flour, divided 1 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1 (15-ounce) can sweet potatoes or yams, drained and mashed 1 cup packed light brown sugar, divided 1/3 cup vegetable oil 1/4 cup skim milk 1 egg 2 teaspoons vanilla extract, divided 1 tablespoon butter, melted Preheat the oven to 400 degrees F. Line 12 muffin cups with paper baking cups. In a large bowl, combine 1 cup oats, 1 cup flour, the baking powder, baking soda, cinnamon, and nutmeg; mix well. Agree that it should work fine. The appeal of the quality of them after canning all depends on how you use them after opening - just as with so many canned goods. In our house they work just fine heated up right out of the jar and fork mashed on the plate just like boiled whites do. A little butter and salt and pepper or a sprinkle of brown sugar and chopped pecan - YUM.. But primarily we use them mashed or pureed in all sorts of recipes for sides. Dave

Recommend you boil first and then peel, then chill them to peeling temp. Not only does it make them much easier to peel but keeping them whole through the first boiling (rather than in pieces) also keeps them more firm in the end, lets them hold up to the pressure canning better, and they keep better color too. Now when I have some that are football size I will cut them into quarters first but leave the peel in place to boil. They just have a tendency IME to turn mushy and fade color if peeled first and then boiled or if boiled in smaller chunks. Dave

Terri, I am going to guess the answer is no. I know that you cannot can pumpkin butter because of density issues so I going to bet it would be the same for sweet potatoes. it is also never a good sign when you cannot find a recipe with the steps for canning. Sounds wonderful though, can you share the recipe?

If you look at the Clemson info on canning it cautions not to mash or puree before canning. That is the same for pumpkin.

It's a shame we can not can Pumpkin Butter as it is one of my favorites but the risk is just too high. Good pumpkin butter is getting harder and harder to find too. But Nancy's Peach Butter is so good that I will not miss the Pumpkin Butter too much!

Below is a recipe I would like to try this winter, substituting canned pumpkin for the fresh pumpkin puree. I would also probably cut down the ginger, nutmeg and cloves a bit. This recipe would make a small amount and not take up much space in the frig.

Pumpkin Butter #1 ONLY FROZEN

1 quart pumpkin puree
2 cups brown sugar
1 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/4 tsp powdered cloves

Mix all ingredients over low fire. Simmer until thick, stirring frequently to avoid scorching.

NOTE: Pumpkin Butter is not safe to can but can be frozen.

Believe me, Ball and Bernardin and the Extension services kept trying to come up with a "cannable" pumpkin butter but had to give up on it. For a while there was a pumpkin butter with OJ in it in the Bernardin book, but the recipe was pulled.

They thought the OJ would make the butter acidic enough for safe canning but it didn't work consistently. The problem isn't just density but water content. The testers found there's such variation from batch-to-batch in the pumpkin (and I assume the same would be true of sweet potatoes) they just couldn't come up with a reliable density or pH. So that attempt went out the window.
