Slooooooooooow cooked turkey - anyone done this?

History: My mom immigrated to the States about 18 months ago. Last year she went to her sister and my cousins for TG and my cousin made a turkey that was cooked overnight and, according to my mom, it had the best crispiest skin.

Has anyone ever successfully done this? Method? My mom, who has only ever cooked one turkey about 40 years ago because she used to live overseas and only Americans cook turkeys lol, is hosting TG this year and has been told by all her guests that they expect a turkey. She wants to try this method.

I'm a little concerned that all the recipes I've see start with "high heat" of 350 (LOL I start at 450) and then after an hour or less you turn the oven to 185 - 200 and cook overnight. Isn't that a recipe for food poisoning?
