Stout Chocolate Cherry Bread

First how NOT to make bread.

1. make sure to NOT read all the instructions in advance.

2. make it the day the hurricane is supposed to hit.

3. put it in the oven 5 minutes before losing power.

Yeah, that was the first try.

Alternate method:

Make a substitution simply because you're stubborn and refuse to buy the needed ingredients.

That was the second try.

Anyway, The bread is good, just very dense. I'm going to try to do it right and follow the exact instructions next time, in about a month.

In the meantime, here is the recipe.


Stout Chocolate Cherry Bread

4 1/4 cups bread flour

1 12 ox bottle Guinness Stout

1 package yeast

1 Tbsp Sugar

1 tsp Salt

1/2 cup dried cherries

4 oz chocolate chips

1 tsp water

1 egg

Combine 2 cups flour, beer and yeast. Stir with a whisk and cover and refrigerate 8 hours or overnight.

Remove from fridge. Let stand one hour.

Add 2 cups flour, the sugar, and the salt. Stir to make soft dough. Knead about 8 minutes. Knead in cherries and chocolates. Put in bowl, cover, let rise 1 hour or till doubled. Punch down, cover and let rest 5 minutes.

Shape into 9" round, put on parchment paper in a pan and lightly coat with cooking spray.

Cover and let rise 1 hour or till doubled.

Preheat oven to 350. Uncover. Brush with egg wash. Sprinkle with decorative sugar if desired. Make ¼" deep cut down center of dough with sharp knife.

Bake at 350° for 30 minutes. Bread will sound hollow when tapped.
