Green onion soup?

Hi all,

I have a lot of green onions (scallions) from my garden and I am trying to figure out a way to use them up. I thought maybe I could make a soup - similar to a french onion soup but lighter? I googled "green onion soup recipes" and "scallion soup recipes". I found a lot of recipes but they really fell into two categories - either green onions and potato or green onions and mushroom.

I would like to make a lot of soup and freeze it. The green onion and potato sounds good but I will also be freezing potato leek soup and I'm afraid they will be very similar. Can anyone coment on that?

The green onion mushroom might be okay - somehow it's not grabbing me though.

Does anyone have any other green onion soup recipes? Or other ideas for how to turn these green onions into something I can freeze?

I never namd it but I'll bet it would be wonderful. I think I would use the recipe I often use for onion soup....made with chicken broth.

I would slice up about 3 to 4 cups of them....and save out about maybe 3/4 cup of the green parts.
Then sautee the onions very slowly in 6 T of butter....stir often and don't let them brown just get translucant and very soft. Turn the heat up and add 1/4 cup flour and stir until it's all mixed....then very slowly add a quart of good chicken broth and half a cup of dry sherry wine and simmer with a lid for an hour.Add the green onion tops and simmer another 5 minutes.
At that time you could serve it with crusty bread and a spoon of grated swiss or parmesan in the bottom of the bowl....or you could add a cup of cream if you want a cream soup.

I have made cream of 'shroom & green onion before, and it was quite tasty. I just subbed the white and light green parts to the initial simmer and puree, and then sliced the green tops thinly to add just before serving instead of cooking them with the extra mushrooms & celery. The powdered, dried mushrooms make for a richer mushroom flavor than many cream of mushroom soups.

Rachel's Cream o' 'Shroom Soup

1 oz dried mushrooms (any variety will do, I like a combination of button and shiitake)
8 T butter
1 medium onion-diced
1 1/2 stalks celery-diced
8 oz fresh button mushrooms, diced
2 t white pepper
2 cloves garlic, smashed
3 T long grain rice (uncooked)
2 Qt chicken stock
1 Qt + 1 C half and half
3 T flour
1/2 C white wine or dry sherry
1 stalk celery-slice
1/2 onion-diced
8 oz fresh button mushrooms, sliced

Put the dried mushrooms in an electric coffee/spice grinder and grind to a very fine powder.

Heat 2 T butter in a non-stick stock pot over a medium heat. Saute the one medium diced onion, 1 1/2 c diced celery, diced mushrooms, white pepper and garlic until the onions are translucent and the celery changes color. Add the powdered mushroom and saute briefly. Add stock and rice, bring to a boil, reduce heat, cover and simmer for 30 minutes.

Puree the stock and vegetables, add half and half and bring to a simmer again. In a small saute pan, make a roux by melting 3 T butter and 3 T flour over a med-high heat, stirring constantly until the mixture bubbles and turns a light golden color. Whisk the roux into the soup, beating vigorously to prevent lumping.

In a large saute pan, heat 3 T butter over a medium heat. Add the remaining 1/2 onion, stalk of celery and sliced mushrooms. Saute until onions are translucent and increase heat to med-high. Add the wine or sherry and cook for 3 minutes. Add the vegetables to the soup and simmer for 20 minutes, stirring from time to time to prevent scorching. This soup, like most, benefits from sitting for at least a couple of hours (overnight is better) before reheating to serve, so the flavors can develop.

Are you looking for a nice rustic looking serving dish? If it doesn't matter the white corning glass bowls with the little tab handle and plastic top would probably hold up pretty well. But then if you are looking for personal experience - I won't risk my two old ones with glass tops - they are my most precious kitchen possession:) I have been using them in the microwave for years - I don't like the new plastic tops. You can usually buy these at Wal-Mart etc. Actually the don't look that different from the LeCreuset ones except they only come in white. If you want the rustic look - check a restaurant supply house for the brown ones you see in restaurants - or ask a restaurant if you can buy some of theirs. I made the recipe this morning and it simmered all day. I used my 3.5 qt crock pot since my big 6 qt was still soaking from the crock pot lima beans last night. We bought focaccia bread. We use the big 16 oz. soup mugs, so we toasted the bread, then put the cheese on top and put the mugs in the broiler to allow the cheese to brown. It's delicious! I made the original recipe and didn't double since the smaller crock pot wouldn't hold that much. That was enough for a full mug each for each of us. Next time, I'll probably wash the big crock if it's dirty and use it so we have enough for two meals. DH loves it too! We both love French onion soup, but this is the first time in almost 20 years of marriage that we've made it at home.

The onion soup I referenced above suggested using a combination of yellow and red onions, I get it is more visually appealing. The same could probably be done in the Martha Stewart recipe. ETA: I was just thinking about the caramelization of the onions and then looked at the recipe on the website and it confirmed for me what my problem with that soup would be. That muddy brown color to me in a cream soup is not appealing. A sprinkling of parsley would help some, but I am a visual eater and that color would be off-putting to me, no matter how good it tastes. Just something to think about if any in your group are similar.

LynnNM, I made onion soup with your recipe and served it at a dinner party last night. It got rave reviews all around. I didn't need swim goggles. My 44 year old Oster Regency mixer/blender/food processor/meat grinder quickly cut the onions into perfect thin slices. Not a tear was shed. Thanks for the recipe. In return here is another soup recipe that I make that everyone loves Ina Garten’s Winter Minestrone Soup Ingredients: Good olive oil 4 ounces pancetta, ½-inch-diced 1½ cups chopped yellow onions 2 cups (½-inch) diced carrots (3 carrots) 2 cups (½-inch) diced celery (3 stalks) 2½ cups (½-inch) diced peeled butternut squash 1½ tablespoons minced garlic (4 cloves) 2 teaspoons chopped fresh thyme leaves 26 ounces canned or boxed chopped tomatoes, such as Pomi 6 to 8 cups chicken stock, preferably homemade 1 bay leaf Kosher salt and freshly ground black pepper 1 (15-ounce) can cannellini beans, drained and rinsed 2 cups cooked small pasta, such as tubetti 8 to 10 ounces fresh baby spinach leaves 1/2 cup good dry white wine 2 tablespoons store-bought pesto Garlic Bruschetta (see recipe) Freshly grated Parmesan cheese, for serving Heat 2 tablespoons of olive oil over medium heat in a large, heavy pot or Dutch oven. Oh, I forgot to say...I think a plain Cream of Green Onion soup such as Linda suggested would be lovely.

Thank you both. OK, I'm going to try both the cream of green onion and the mushroom green onion. I certainly have enough onions for both! Thank you for the suggestionS
